too many avocados! help!

Slice your avocado. Spoon over some tomato sauce. Top with a cheese sauce. Slice some mozarella over and sprinkle with parmesan. Grind some black pepper over the top and bake in a moderate oven for 15 mins. Cut avacado into halves. remove stone (you do that by hitting the stone sharply with the sharp blade of a big knife... the knife embeds into the stone which then removes easily) fill the cavity of each with a mixture of plain yogurt and lots of garlic..... delicious as a starter.I'm Glad to be here... At my age I'm glad to be anywhere!!

yummy - delicate flavour and very creamy texture. difficult to describe but goes v well with something sharp, such as the "marie rose" sauce suggested earlier.Highest debt - £24500 :mad:

saw a nice recipe i thought i might try
get a 200g tub of low fat prawn cocktail, do a slice of toast and spread with some of the mayo in tub then follow with chopped iceberg lettuce, sliced avocado then prawn cocktail, dont really fancy using toast but cant think what else i could use, sounds okay though0 -
I like cubed avocado, drizzled with olive oil and sea salt/pepper with smoked salmon/marie rose sauce, stilton cheese and salad.de do-do-do, de dar-dar-dar0

Going back to the 1980's fashion for serving with marie-rose sauce and prawns, it's really nice served with melon balls and the marie-rose sauce - perfect for vegetarians.
Home made marie-rose sauce
Mayonnaise 4tblsps
Tomato sauce 1 tblsp
Lemon juice 1 tblsp
Paprika
Add a little chopped garlic if you like (or garlic salt).
Mix all ingreds together. (Amounts are guestimates of what I use, as never measure anything).
For lower fat recipes, use low fat mayonnaise, or combination of that and plain low fat yoghourt or fromage frais.
Guacamole is one of my favourite avocado recipes - use it as a dip with tacos, or serve with loads of Mexican recipes. You can make it as spicy (or not, if the meal is fiery) as you like.
Really good with tortilla wraps for everyone to make up at the table - bung everthing in bowls
Home made tomato sauce (with or without chilli depending on taste)
Shredded lettuce
Sliced tomatoes
Grated cheese
Fromage frais or plain yoghourt (Greek is best)
Left over meat strips/thinly sliced meat such as roast beef or chicken
Or quorn/roast vegetables for vegetarians
Guacamole
Adapt this recipe using anything that you have - left over chilli con carne/spag bol sauce, but omit tomato sauce. Reduce the sauce though, or have loads of paper towels about for mopping up the mess!
Another quick and easy recipe using guacamole.
Packet of taco chips
Tomato sauce with or without added chilli, or chilli con carne
Fromage frais/plain yoghourt
Grated cheese
Guacamole
Olives
In oven-proof shallow dish throw in some taco chips just to cover bottom, add a tablespoon or so of tomato sauce/chilli, just dotting about, then some grated cheese, add more tacos, sauce and cheese, continue until dish is full finishing off with cheese. Bake in oven for about 15/20 mins gas mark 5 until cheese melted. Serve with a dollop of guacamole and yoghourt.
Nice for serving for sharing in a large dish, or in small individual dishes.0 -
Also nice is to stuff pitta breads (the mini ones from M&S are very nice!) - warm them in the toaster, slice along one side to make a pocket, stuff with cubed avocado, halved cherry tomatoes, and whatever else you fancy - prawns are good as is a little mayonnaise, yoghurt with a squeeze of lemon, or marie rose, mozzarella is a nice substitute for the prawns, bit of shredded iceberg or little gem lettuce always goes well - whatever you like really! Cubes of hot chicken and avocado in pitta breads is good too - add mayo, lettuce, chopped bacon - makes a nice lunch with a cold beer or glass of wine to wash it down."The happiest of people don't necessarily have the
