I like to have them in a chicken burger. Spicy grilled chicken breast with crispy bacon, cheese, sliced avocado and may on top - yum!0

Mashed on toast with a bit of salt, pepper and lemon juice.0

I am so envious! I was hoping to come across a glut last summer so I could make this recipe but it never happened

The good thing about it is the dough can be frozen, as can the individual pancakes when made.Value-for-money-for-me-puhleeze!

If I have pasta with tomato sauce, I add sliced avocado just before serving.0

I toast a pitta bread and meanwhile mash the very ripe avacado with spring onion, spread this on both sides of the hot pitta and add rocket or leaf salad, cucumber, etc. I have even been known to throw in a few slices of chicken tikka if I have any going spare. Delicious. Beetroot goes very well too.
Tonight I am going to mash and get slices of smoked salmon, spread with avacado and then add some pickled sweet red peppers and roll up the salmon and chill in cling film before slicing to have with a leaf salad. I love them cut in half and topped with cottage cheese with a small amount of ginger sprinkled on. Makes a lovely breakfast or lunch0

Cut in half and remove the stone. Sprinkle between half to one teaspoon of sugar on each half, depending on how sweet you like it. Then add a teaspoon of Cognac (or a little bit more if you like it) to each half. Heavenly!0

I don't know if anyone has mentioned this above, only skim reading.
But you can freeze them apparently, one of my pinterest finds.

They would never make it to my freezer, they're my favourite! I often eat them straight out the skin or on toast. Also lovely with crayfish tails in a salad. I've made a chocolate treat with them before that is dairy / gluten / sugar free:

the advocado has to be really ripe and squidgy for it. You can freeze it so you get "chocolate ice cream" too.0 -
