    I've only used them for wraps or filled with l/o chilli (burrito's???)

    Oooooh yes that does sound exactly like what I'm looking for, thank you! :T :D

    I knew it had melted cheese in but wasn't sure about anything else, although I suppose you could put anything in really ... but I seem to have forgotten how to cook at the moment :o


    I found some tortillas in the freezer so I might just be able to manage something like this for dinner tonight ;)



    quesadillas are lovely, when i still lived in texas we used to get them from the 'mom and pop' style mexican restaurant down the road a lot

    place your bottom tortilla on the grill pan the spread with your fillings (refried beans if you can get them are really nice for a base) shredded chicken, pork or beef and/or cheese. we always got them with pico de gallo (pronouced peek-oh de guy-o) which is finely chopped tomato, chilli, onion and coriander (cilantro) leaves nice and fresh. you put this in with the filling mixture then sprinkle cheese on top of the mixture then top with the second tortilla and pop under a medium grill until the cheese melts. you may have to cook them in the oven if your grill browns the tortillas too quickly.

    when finished cut into pie like slices and serve with guacamole and sour cream (i use greek yogurt here as your sour cream is NOT like it is in the states GY is very similar) mmmmmmmmm tasty! i might have to make some of these for lunch now as i've got 2 tortillas left :o

    You chould try either Creme Fraiche or Half Fat Creme Fraiche instead of soured cream HOLsale - I much prefer it. Creme Fraiche is very creamy, and the half fat version has a runnier consistency - bit like thick yoghurt.

    Use four tortillas for this recipe

    Divide a tin of mixed beans in tomato sauce and a tin of pineapple between the wraps. Roll them up and put in a shallow dish, pour over a cheap jar of pasta sauce and sprinlke with grated cheese, pop in the oven for about 20 minutes gas 5. Serve on a bed of rice - scrum diddly

    Hi first time poster but have been reading the board for months!

    A fave recipe I have for tortillas is a kinda pie/lasagne dish.

    Just brown some mince with onions, add tin of chopped tomatoes and some tomato puree (optional garlic puree as well).

    Line an oven dish (I usually use a glass round one) with a tortilla wrap, then add a covering of mince and sprinkle with cheese, add another wrap on top then continue until 6 wraps have been used.

    I usually serve on own with sour cream or with rice and sour cream.

    I use a version of a recipe from the 'The Best' series. Chilli cheese tortilla sandwich.
    Two tortillas, cheese, parma ham, basil leaves and 1-2 tsps of sweet chilli suace.
    Dry fry first tortilla, add ingredients, top with other tortilla and flip over and brown other side. Cut into wedges and serve with a cold beer. (optional)
    Humans only use around forty percent of their brains capacity. Imagine what we could achieve if we used the other seventy percent!
  • need to get some cheese to try this out soon. we have salami and chirozo so plan to use this.

    i actually prefer greek yogurt to creme fraiche though as it has exactly the same tartness and thickness as american sour creme but i do use creme fraiche sometimes if that's all that's to hand... the creme fraiche is slightly grainy to me (or pasty) and isn't quite as tangy... personal tastes though i say do whatever works for you

    you should have seen me the first time i tried uk sour cream, now that was a sight :rotfl:
