At work we just clingfilm it and into the freezer
the dough i bought home iv just floured it and put in freezer bags and put it in the freezer

I made pizza dough in my breadmaker but the breadmaker only mixes it - not proves it.
The breadmaker also leaves the dough quite sticky even though I follow the recipe from the accompanying recipe book to the letter and have very accurate scales and measuring jug.
I put the dough in the airing cupboard for several hours where it doubled in size but then smelt of vinegar. (Nothing in the airing cupboard has been 'vinegared'.)
Instead of using normal butter in the recipe I tried garlic butter - was this the cause?0 -
I know that dough left too long can smell sour, so maybe a combination of time and temperature made yours over-ripe.
As for the dough being sticky - it's surprising how little extra water will do that, or the absorbtion properties of the flour... it doesn't need slight variations in weights to mess up in a breadmaker, slight differences in ingredients can do it too.
When baking bread by hand you just bake it bit early if it's rising fast, or leave it longer if it's slow. A breadmaker works on precise times and it's only too easy for the slightest thing to mess up a loaf.
Anyway, some of the sourness of the dough will disappear when baking it, but not all. Hi I use Judi's recipe and put it in my BM on the quick mix setting. It only takes about 7 minutes in mine then I usually leave it another half an hour to rise again on a tray after I've divided it into portions.:smileyhea0

I intended making pizza dough in my breadmaker but when I weighed out the strong white flour I only have about half of what I need. I have plain flour, self raising and wholemeal in the cupboard.
