    I used to work in a pizza shop so from my experience once you have made the dough, put it in the fridge it won't rise very much at all.

    I believe you can make pizza with a scone-type base, which would not need to rise. I'm sure someone else will know better than me though!

    For a scone type pizza base - you need a mug/cup - how big depends on how big you want your pizza:-

    2 mugs of flour (self raising)
    2/3 mug of milk
    1/3 mug of olive oil

    Mix together in a bowl to form a dough, knead for a few minutes on a well-floured board, then put in to tin.
    Takes about 10 minutes to bake in oven at about 200 degrees when you've put the topping on.
    Very easy, and nice, especially for children who don't like their pizza bottoms too crunchy.

    Leave it to rise again.

    When you want to use it, flatten the middle of the pizza and leave yourself a nice big crust. It's fantastic like that. :D

    Not only is it OK to leave the dough in the fridge but an extended fermentation improves it, though 3 hours may not make a lot of difference.

    Just to add in that you can freeze pizza dough very successfully - means next time you're in this position you can just lift it out of the freezer. Best if defrosted in fridge :)

    I made my pizza dough in the breadmaker and it was left in the breadmaker for 4 hours. Then put the dough in the baking tray and it didn't go into the oven for another hour (due to hubby being late home). We ended up with a pizza dough very similar to Pizza Hut Deep pan but without the grease!
