For egg whites to stiffen, they must:
* be at room temperature
* not be too fresh
* be whipped in a completely grease-free bowl (run over with half a lemon if you need to)
* be whipped at high speed with a metal whisk or beaters (which must also be completely grease-free)
* have no yolk whatever in them (may be easiest to break the egg into your (spotlessly clean) palm and let the white run off into your bowl than using a shell to separate
I made 8 christmas cakes today - and haven't tasted anything. :A

I don't do xmas pressies, but make a token something for family that we see around xmas. Last year I did handmade chocs and fudge which took me hours and hours and hours and .........................................
This year it's cake - a bit of prep and then several hours in the oven - much easier :rotfl:
They'll get a bottle of wine with it too0 -

My annual rant about buying Christmas presents that people neither want nor need, and that afford the giver no pleasure to purchase, will wait until another day0 -

great idea tink and am with u on the present thing.. we really only buy for ds, each other and my parents... other than that i buy for 3 friends but not their kids we agreed ages ago that they get far too much and we wont add to it... even then what we get each other is stupid little things which are fun
i dont know why more people dont sit down and just agree not to buy for each other or to just say we will all go to poundland and buy one thing each, it would save a fortune, save all the waste and save all the angst
ooops HC did i do your rant for u lol
i still LOVE chrimbo tho!!!!!
