  • This wasn't from a low carb trial but the basic point applies to low carb eating. One of the main concerns is that by cutting out carbohydrate we inevitably eat more fat. This is often regarded as an adverse effect of low carb eating but you see from this research that eating more fat improves insulin resistance. (it also improves feeling of satiety so you don't eat so much)

    Eating more fat improves insulin resistance In the MUFA group, fasting insulin decreased by 2.6 ± 3.5 pmol/L, the homeostasis model assessment of insulin resistance by 0.17 ± 0.13,.....the Low Fat group, these variables increased

    aww i'm trying ..lol

    find the weekends really hard to stick to any sort of diet truth be told but this one does seem a bit more versatile in that respect than others. we also took the kids out for a KFC and at least i was able to eat the chicken though i did lay off the chips!:D

    We are going to see an elderly relative at the weekend and have fish and chps so have decided to just have fish, take the batter off and take some sliced tomatoes or something to go with it.

    Have only done five days but have to keep going to "spend a penny! which I hope means I am losing weight.

    My trousers are becoming a little looser so fingers crosed.

    pink68, you didn't eat the KFC batter, did you? :eek: I can always resist KFC as I think it's pants, but a McDonald's quarter-pounder used to go down rather nicely once in a while. :D

    Good luck at the weekend, Elona. Fish batter's the best bit - I don't know if I'd be able to resist it...:o

    I got dragged yet again, kicking and screaming :p, to Pizza Express for lunch by DD yesterday. Sooo sick of salads in this weather (nice as PE's salads are) so went for the Melanzane Parmigiana. It was lovely and very filling but very tomatoey - and I've no idea if there was thickener in it. Hope not. But it's better than pizza anyhow.

    made rhubarb crumble today - crumble made with almond flour butter and splenda

    looked lovely but the crumble topping didnt get that crunch/bite type thing to it - was a little soft so not sure if it was a success or not
    would have been nice if i had any ginger to add in to it !!

    I thought I would check in so that you know I'm still here and still low carbing.Though god knows why as I have absolutely no motivation at the moment:o I havent cheated but been sorely tempted to

    I've made that too - it works quite well if you bake it in a wide shallow dish ;)
