    Also what they didn't take into account was the body adapts to ketosis and it may take some people a month of gradual low carb adjustment for their brains to be functioning ideally on ketones as fuel

    Well its monday so it has to be weigh in day and I've lost 3lbs and now lost 2 stone

    Hi everyone , Im still low carbing :D , and today I thought Id make myself some pancakes for breakfast .
    I usually make the ooopsies but today I decided to modify the recipes slightly because my ooopsies always break up when i turn them over in the pan.
    So this is what I did ....

    whisked up the 2 egg whites until stiff (added a teaspoon of sweetner).
    Mixed one large tablespoon of cream cheese into the 2 egg yolks,
    Then one tablespoon of soya flour into the egg yolks.
    Then folded the egg yolk mix into the egg white mix slowely.

    To my delight the ooopsies tasted more like real pancakes,
    they didnt break up when turning over,
    and I couldnt taste the soya flour ;).

    So I have named them "soya ooopsies" :rotfl:

    I haven't tried these yet - but I thought you did them in the oven? Can you do them either way?

    lol , Ive done them in the oven before but when i do pancakes I do them in the frying pan :o . They are out of this world and I put some davinci toffee syrup on top :j .

    also the cream cheese I use is 46p from aldi , it tastes so much nicer than the philedelphia, its not so strong and is perfect for a background ingrediant.

    I'll have to try them. Sounds yummy! I had a sweet craving the other day, and had Philadelphia sweetened with Splenda. Ooh, it was lovely, just like cheesecake filling. Maybe I'll put a squirt of lemon juice in next time.

    HC , you will need a food processor to get perfect stiff egg whites, do you have one of them to use ?

    mmmm, the lemon juice would of been good in the "ooopsie soya pancake".

    I find my sweet tooth is what holds me back .
