    Beef, veg and wine casserole.

    I bought some lovely beef from my local(ish) farm shop. Tossed it in seasoned flour and browned it, added some smoked bacon lardons, potato, leek, celery, onions, chili, garlic, carrot and a tin of tomatoes. I added some wine (a mix of leftover red and white) and some stock. It smells yummy. Some of it will be for tonight with dumplings, the rest will be frozen for another day (or 2).
    Aim: To clear debt in 2 years then start saving!
    Debt at start (31/10/08): £21818.30 :eek:
    Payments to date: £353.08 :j
    Debt left to pay: £21465.22/£21818.30 :rolleyes:
  • Ive had a Shoulder of Lamb in SC since this morning 5-6hours, with just a little water in. Sprinked some Chilli Seasoning over the top.

    What should I do with the Water/juices/fat thats in the bottom now, just drain it out, thought it cant be good for you. any ideaS?

    Got some onions, carrots n mushrooms to go wiv the lamb, that i will put in soon.

    Transfer it to a saucepan and thicken with cornflour to make a sauce, spoon off the fat that settles on top so you literally have just the sauce like gravy YUM :T

    Today in my dual pot slow cooker I have;

    lamb casserole: glug of red wine, 2 tsp mint sauce, 300ml veg stock, 400g chopped tomatoes, lamb and onions

    and

    bolognaise; 800g minced beef, red wine, chopped tomatoes,mixed herbs

    will have some of the lamb casserole tonight with veg and potatoes and freeze the rest of the casserole and freeze the bolognaise in individual portions :)

    I love my dual pot ... I can save money by cooking two dishes at the same time!

    Anyone know of a good Stifado recipe that I can do in the slow cooker? Really fancy it in this cold weather....

  • Bit confused by people saying they are cooking meat without water, or just a little bit. I'm sure my slow cooker instructions says it needs to be half full to be safe. I keep ending up with too much liquid in my stews etc. as have a huge slow cooker. It never goes to waste as I tend to try and use it for stock but even knowing if I dont have to add extra liquid just to be one the safe side would be good!
