I've been known to eat a homemade thick veg soup for days on end (one batch makes enough for about 2 weeks, but it freezes well). It does take a while to prep the veg though, and I use a blender to whizz it to smooth (recently had to buy a glass jug one after the plastic one I had started to show hairline fractures from blending while it was still warm). It's fillimg because a portion contains about 6g of fibre - which is a third of the recommended daily minimum. (And if I do a lot exercise in a morning, I just add a slice or two of bread - normally the half & half type or wholemeal or a seeded/granary - for dunking and further increasing the fibre count)

Hi all, just checking in! Everyone is eating such yummy sounding food, I'm jealous! Couldn't be faffed to prepare anything yesterday so am having my emergency ryvita/laughing cow light for lunch. Must do better tomorrow!
I managed to drag myself to the gym yesterday and finished week 5 of couch to 5K on the treadmill - I was planning to go back a week but had a last minute rethink and picked up where I left off last month. Surprisingly it wasn't too bad.
Cinny I'm doing the 30 day squat challenge too after you suggested it, I'm a day behind you though so good to know I have a rest day to look forward to tomorrow
Have also managed to keep up with 30DS, although only on day 4 so probably a bit early to be feeling smug!
ETA Tete did you weigh yourself at the same time of day? I often weigh 3-4lbs heavier in the afternoon compared to first thing.
Also I can't remember who but I'm sure someone else had a Fitbit? I have the older one (the Ultra I think) but would be happy to team up if you fancy a challenge? - Onions, Raw, Average-247g (I use 2-3 onions)
- Potatoes, Baking, Raw, Average-420g (a couple of good sized potatoes? and I don't peel them as that retains more fibre)
- Cauliflower, Raw, Average-1098g (I use a whole cauli including the thick stalk)
- Cabbage, White, Raw, Average-656g (I normally use a whole small one, or half a large one)
- Squash, Winter, Butternut, Raw, Prepared, Average-652g (normally one very large squash, peeled and seeded. a couple of smaller ones if the store doesn't have any 'giants'. during the halloween seaason you can replace this with pumpkin flesh which works just as well
)
- Leeks, Raw, Trimmed, Average-371g (1-2 leeks)
- Peppers, Yellow, Raw, Unprepared, Average-200g (1 pepper)
- Celery, Raw, Trimmed-159g (a few sticks - can be omitted, but it's a godo way to use the stuff up)
- Garlic, Raw, Average-10g (1-3 cloves to taste)
- Stock, Herb Infusion, As Sold, Stock Pot, Knorr-1 Pot/28g (not essential - can add dried herbs instead, but I had these in the house)
- Carrots, Raw, Scrubbed, Average-449g (I normally add 3 large carrots, but it varies per batch depending on the size of the cauli and cabbage I get - the larger they are, the more carrot I add)
- Ground Black Pepper - to taste (I add a bit while cooking, and often put a grating over as I serve)
- prep all the veg, and chop it all up - doesn't need to be in tiny pieces, but the thick stalks from the cabbage and cauli benefit from being smaller
- put into a pan (needs to be a large one - I use a huge stockpot, or my pressure cooker having removed the rubber seal from the lid so it works as a normal pan - you may need to hold back the cabbage to add after it all starts to reduce!) with enough water to come a few inches up (keep an eye on the pan while cooking and add more if you need to. if it still looks too thick when you blend you can add more at that point too)
- bring to the boil, then reduce heat and simmer and leave to cook until all the veg is soft
- leave to cool for a while (or completely if your blender has a plastic jug - expensive lesson learned here!), then blend in lots of small batches - you'll need a container to put all the blended soup into to stir round before portioning up
- I love it served with a grinding of black pepper, and for total luxury a teaspoon or two of creme fraiche

Thanks for the recipe, that looks great! I had uninspiring and very lazy shop bought soup for my lunch today. I think maybe I need to invest in a bigger pot - I do make soup and chicken stock, but only tend to end up with 4 or 5 portions which doesn't seem worth it.
Hope everyone has a good weekThis is my first 'proper' day back at work and 'on the wagon' and boy, is it dragging! I couldn't face exercise as well, but I've got a PT session tomorrow and booked in for a spin class on Wednesday. We moved house fairly recently so I've got a spare room which will be perfect for shredding and yoga, just as soon as I've shifted/unpacked a mountain of boxes and painted the ceiling. It's a good incentive!

cw18, this may sound like a really stoopid question here, but can you actually taste the cauliflower or cabbage in the soup? I only ask because I don't like the taste of either...0

I don't specifically - but I do like them. Probably taste more of the cabbage than the cauli.
I once made it with a very small amount of swede, and struggled to eat it 'cos I hate that and could taste it. I had a couple of batches in the freezer, and the first spoonful told me whether the one I'd just heated was from the batch with swede or not !!!Cheryl0 -
Back to logging in and using MFP. Reduced my mini tortilla at lunch from four to three due to the amount of calories. I tear them up and put them in the spiced lentil soup. Don't ask me why, but it makes the soup taste even nicer.
Got home and did twenty minutes on the bike. Did 9.4km. Which I'm pretty impressed with. Still need to adjust the seat and foot straps a little.
Noodles with hoi-sin sauce and raw veg for supper. Am hoping that the veg will prep itself whilst I recover from the bike!Feb NST #4

Evening all. Been an okay day, thought I'd actually fallen off the wagon by throwing some parmesan on my dinner as it was a bit bland, but when I weighed the block after I'd only used 6g so actually still had enough calorie space for the orange I wanted yesterday. Made pasta for tea with a turkey steak and broccoli, I always think pasta is a real no go on a diet but this one comes in at under 400 calories (317 the way I made it, extra creme fraiche and sundried tomato puree but leave out the faff of pureeing sundried tomatoes in oil), and I didn't even need the whole portion. Was a massive hit with DD who cleared her plate for once, I tend to do simpler dinners the nights it's me and her, and save the complicated cooking for wednesday and thursday when NIM is off work.
20 minutes cardio and 25 minutes of yoga today. It's really hard to do any more with a toddler! We're out all day tomorrow so I'm worried where I'll fit it in.
2 sleeps until the first weigh in! Is it odd I'm excited? Please can I nicely remind everyone if you have anything to add to the chart, weekly weigh ins, an adjusted goal weight etc, make it bold or colourful so I don't miss it. Went for a walk today to hit 5 different shops for a total of 8 things - 2 of which they didn't have !!!
1hr 40 (plus time in stores) to cover 5 miles exactly (plus wandering around inside stores) which earned me an extra 533 calories
Had 0atSoSimple for breakfast (have a small mountain of these need using up), then tomato and noodle soup (another I have mountains of as bought loads when on a good offer!) with a cheese topped roll filled with brant0n pickle and sliced gammon (a joint I cooked in the slower cooker last month, then froze chunks of for later use) for lunch. I'm having roast beef with jacket potato, baby sweetcorn, carrots, broccolli, cauliflower and gravy for tea. I had a couple of small (14g) packs of dried fruit and a pack of fish 'n' chips (baked crisp type thing) as snacks, and may have some tinned fruit tonight if I get hungry again before bed. Not calorie counted tea yet, but should have heaps of calories left for supper - may even have a hot chocolate drink as I have a load of those to use up tooCheryl0
