I can do the carb count but need weights, have never weighed a courgette! Looks lovely though, doesn't it?
(meant the lasagne, tho courgettes can be attractive :rotfl:)

Thanks mercy, I shoulda weighed everything really but was rushing before work and also making a casserole for my sons so didnt have time. will only experiment on my days off in future. Only just came home so will post the weights tomorrow.
Just had a another teeny taste and is really tasty and so like lasagne, firmed up nicely now its cold too.
will definately be making those muffins. Cant wait to try out my new silicone muffin tin from home bargains was £2.00 and they're a fiver everywhere else.0 -
Weights for lasagne
minced beef about 500g
2 cloves garlic, some basil leaves
3" piece chopped leek
cheese 200g plus 50g for sprinkling
double cream 100ml
tin toms 400g (12g carbs)
270g courgette (was 3 huge ones in pkt from Aldi, used one)
Fry 1/2 of the chopped leek, one clove garlic until softened, add tin toms and simmer til thickened, add basil and blitz to make sauce.
fry mince 1/2 chopped leek and clove garlic, when browned add sauce and simmer til tender.
Thinly slice courgette ( with cheese slicer) and boil in salted water for few mins, drain and cool.
make cheese sauce by simmering 200g cheese in cream (add drop water if too thick)
layer mince, cheese sauce, courgette, repeat and sprinkle with remaining cheese. Makes four servings
unsure of cooking cos my oven faulty but
i would guess 180-200 for 20 mins as everything already cooked.
Does that sound about right mercy?
worth the effort is fab with salad... carb count to follow..

Well, just over three weeks and lost 5lb, would've liked more but going the right way, had stalled but back on track, think it was the milk which is disappointing but cream is ok in tea i spose :sad:
Watched three people in work eat HM coffee and walnut cake during break and all i could think is.. all that bl**dy sugar!!
Didnt want any, (really) had my pepperami and piece cheese.

I'm feeling a bit weird today. I'm not sure if I'm in accidental ketosis - I say accidental because I'm not doing Atkins & haven't been trying to attain ketosis. Does anyone know the symptoms? I just feel odd.
Anyway, my menu for today
B - 2 pork steaks
L - tuna salad?
D - hopefully mazzer's lasagne if the mince defrosts in time!! Will be sharing with family so will also have cheesy leeks with it. Just for a change!!
I have to go out now so will pop back later.

I'm the same. Sadly I don't think there's anything low carb about BaileysIf there was we'd have heard by now and I for one would be permenantly pi$$d
