I loathe coconut, which is a shame as otherwise I'd definitely try that recipe.
I made pancakes (from Dr A's New Diet Revolution book) today with soya flour. They were great - as near as dammit to normal pancakes. So I can use soya flour to make Yorkshire puddings, pastry, cakes...:j:j:j I think I'm getting a bit carried away, as it's still 19 per cent carb. But it makes a change from those horrid ground almonds.
All depends how much you use, might not be too bad in the final analysis

The other day (for the first time) I made buttery chicken. Baked mini breast fillets with butter and a veg stock cube sprinkled over - turned a couple o times in cooking. Was ace on a bed of rocket with extra romaine lettuce on the side. And some of the juice drizzled over - made the most of the rocket
Anyway, had a few pieces left over so tonight I mixed some cream cheese with mayo and a VERY LITTLE minced garlic (tip of a teaspoon) and some small amount of blue cheese thinly sliced. Finely chopped the remaining pieces of buttery chicken and mixed in. It tastes lovely. Am leaving it to reach room temp to bring all the flavours together. Will eat on more romaine / cos lettuce as they go so well.
Just another tasty low carb idea - we need'nt get jaded - there's so much to go at!

Well I actually got home before 8pm tonight :eek: so I'm making the most of it... by going to bed
Today's intake:
- The most heavenly breakfast ever concieved! Total yoghurt with whole almonds and cacao nibs, with a tiny squirt of agave nectar. It actually tastes like chocolatey mousse without the sugar! Is low-carb and full of lovely anti-oxidants.
- Free mushroom pizza sample from the restaurant round the corner (no it's not low-carb, but it's very MSE)
- Wok to Walk vegetables and tofu in coconut curry sauce
I keep forgetting to mention the fruit I've started eating - usually an odd apple or banana in between meals. I know it's supposed to be banned, but it's actually provided free in my office and is a great way to stave off hunger when you're rushed off your feet... and did I mention it's free??? I do find it hard to believe that banning pasta/bread/sugar from my diet but including whole fruit can be a bad thing... Oh they sound flipping good Mercy. I would not be able to have only one though. My eating habits have changed a lot but year and years of not stopping at one thing cant be changed in a few weeks. So I'll just drool from a distance I think.
Atkins bar has 2.2g carb btw. The carb count is low but it's enough to stall me (again :rolleyes: ).
Spose it depends where the carbs come from. Not trying to persuade you to make the coconut muffins, you know yourself best. But from what I've gathered on here atkins bars rely on 'artificial' so much that the stuff in them may have a greater effect in !ways we do not understand!!!!'twighlight zone music' !!!!!

Mercy, that chicken sounds yum, agree there are so many low-carb recipe ideas around now. So why do I always end up with chicken & cheesy leeks?! :rotfl:
Am still feeling stuffed after my dins - garlic chicken & cheesy leeks!! Lol!! Ended up eating all of the cheesy leeks myself because hubby & kids had pizza. They had eaten their dinner before mine was ready but when I was eating mine hubby & youngest were drooling & moaning that mine was nicer than theirs!! Lol!! True though. :rotfl:
Well, got to go peeps, eldest is whining that she wants to go on the laptop.
PS. Not that anyone will be interested :whistle: but I happened to notice that a 70cl bottle of Baileys is on offer in the co-op, think it was £8.99? Make a nice mother's day pressie methinks!!0 -

I think you are doing what you can. If you feel hungry you should eat. And eating for free sounds goodYou are also a veggie and although the sugar content of fruit isn't ideal, it could have been more pizza
Do your best and you'll probably find any sugar will be worked off by all your rushing around. With your long day it must be so hard to take along enough to cope on totally low carb. Maybe as you / the job sorts itself out more low carb choices will be easier. Just so long as the fruit eating isn't gratuitous Im sure it'l do you no harm.
Be happy hun, you've got more going on than most here, wait til your pole arrives! There's no stopping you now!

Chicken with stock cubes over them and cooked in butter oh yummy my friend has got me some wholesale chicken fillets 15 large ones for £12 so ill be having chiken for a while then iv had loads of steak lately so ill need to make a few changes.
B - boiled eggs mashed with butter
L- Beef burger salad(got it resturant think the the dressing had suar in it:o)
D-bacon ceaser salad homemade
drinks coffee with cream and water snacked on pepperami
