Cut the bananas lengthways and then into 4 pieces and place in a microwaveable dish. Sprinkle on cinnamon, ground cloves and ginger, NOT too much. Give it a shake to coat all the banana pieces. Cover and put in microwave oven for approximately 3 - 4 minutes. Delicious with cream and a little sherry for grown ups!!!0

Haven't read the whole thread, but didn't find Banana fritters.
I wanted something v. quick and v simple to do with some brown bananas and found this carribean recipe:
Mash 6 overripe bananas, add two eggs and half a teaspoon of nutmeg. Add enough flour to make a thick mixture and fry in medium hot oil. Drain and sprinkle with sugar.
They were lovely with ice cream and syrup. Tasty on their own too and even healthier (will have to try them in my snack maker to do without the oil)0 -

I have found myself with about 5 bananas that are really brown and soft, and was wondering what uses I can have from them rather than just binning them? I know a lot of people make banana loaf - is this relatively easy?
Any other ideas? xMFW

You can freeze them in their skins! Just take out 1/2 hour before you want to use them and make banana loaf, banana muffins or use them up in fruit smoothies by adding some orange juice.Our days are happier when we give people a bit of our heart rather than a piece of our mind.

or you could keep them in their skins, make a small slit through the skin and halfway into banana (not all way through though) and pop some chocolate in, wrap in foil and bake in oven approx 180 deg C for around 15 mins
Or take them out of skins put a cocktail type stick in the end lay on a baking sheet and freeze and youll have banana icey pops

This is the recipe I use, works for muffins as well!
Banana Bread
(great for using up those over ripe bananas)
3 very ripe bananas (almost walking) or use defrosted frozen bananas!
pinch of salt
6oz melted butter
1 teaspoon bicarb of soda dissolved in 1 tablespoon water
6 oz caster sugar
1 egg
9 - 10 oz plain flour
Smash bananas (food processor is great for this recipe).
Add remaining ingredients, mix together. Pour into 2 greased or paper lined 1lb loaf tins or 1 lined 2lb tin.
Bake in moderate oven (180C/350F/Gas mark 4) for 45 minutes. Will also make as muffins. Freezes well and is lovely sliced, toasted & dripping with melted butter.

This is about the easiest recipe I've ever done! Just chuck all the ingredients in a bowl and mix
All-in-one Spiced Banana Cake
2 ripe bananas (the softer the better)
8oz softened butter or margarine
6oz caster sugar
2tsp mixed spice
2tsp baking powder
8oz self raising flour
2 medium size eggs
Preheat the oven to 350F/180C/Gas Mark 4. Grease and line an 8 inch round cake tin (or I use a 2lb loaf tin). Beat all the ingredients together and spread into the prepared tin.
Bake for 40 minutes, reduce temp to 325F/170C/Gas Mark 3 and bake for another 20 minutes or until a skewer inserted into centre comes out clean.
Cool in tin for 10 mins, then turn out and cool. Store in airtight tin , eat within 4 days.0
