Baking day...What to bake???

I was going to bake a tray bake type thing today but the recipe states to use a 20x30cm tin - I only have 20x20Dream of being mortgage free....

Muffins/fairy cakes can put loads of variety in these, cherries, choc chips, sultanas etc
Bread Pudding - I save all the crusts from sliced loafs in the freezer and when I have a bag full I mash them up with some water and milk and sultansas, then add some sugar and cinnamon. Put in a loaf tin and cook for about 20-30 mins til its 'dried out'. I slice it wrap each slice in cling film and freeze. Great treat and cheap too! I made one this afternoon!
Although I don't freeze it flapjack seems to last ages in a tin

Choc Chip Cookies
Cream8oz of soft marg wirh 6 oz od sugar
mix in 10oz sr flour
6 oz oats
4 tbs of golden syrup
add 2 100g bags of choc chips ( have substituted with raisons /nuts or mixed and matched )
optional cinnamon
forminto small balls ,placed on lined trays ,flatten slightly ,cook in hot over for about 8 mins until light golden brown, They will be soft when you take them out but as they cool will harden up, so important not to cook them too long . These cookies come out soft and chewy
I made these today, and they are SOOOOOO delicious! I've had to put them in the freezer to stop myself eating them all :rotfl:0 -
I don't know if Morrisons still have the offer, but last week they had 12 hole muffin trays down from £6 to £4. I can't remember the make, something begining with P? Prestige or something I think?Dogs and Cats are better than kids because they eat less, don't ask for money... and if they get pregnant, you can sell their children!0

I mentioned this on the other baking thread, but I made Sophie Dahls Banana Bread, and it was lovely!! I did slightly modify the orginal recipe (as I had not vanilla extract, and totally forgot about the cinnamon) so have posted what I did
3 or 4 very ripe bananas (around 360g of peeled bananas)
150g brown sugar
1 egg, beaten
75g butter ( except I used Stork)
170g all purpose flour
a pinch of salt
1 teaspoon baking soda
Preheat the oven to 180°C. Mash the bananas with a fork or a hand blender/mixer. Add sugar, egg, butter and vanilla. In a seperate bowl mix the flour with baking soda. Add the flour, mix only until everything is combined, the batter doesn't need to be perfectly smooth - don't overmix it though! Pour the batter into the baking tin and bake for 50 - 60minutes.
I used a loaf tin that was 10 inches x 5 inches x 3 inches, and lined it with baking paper, just to be on the safe side!
It came out really moist, and not at all as heavy as other banana breads I have made. I will be sticking to this recipe from now on. It was ace cold, but I think would be nice hot with cream or custard, or even with some caramel sauce, or spead with Nutella! Yum!:T0 -

I have a half batch of these (still made 24 good size cookies) in the oven now and the dough was delicious. Only changes I made was to add a touch of vanilla instead of the cinnamon, and used chopped chocolate instead of chips. I'm not even a cookie dough fan, so can't wait to try them. :T
Edit to add: They're just about cool enough to eat and my test three were yummy! :rotfl:0
