Baking day...What to bake???

    Muffin receipes use a lot of plain flour and you usually need to also add in baking powder. I got a banana muffin receipe out of tana ramsay receipe book and it was lovely and great way to use up ripe bananas but you could do raspberry, apple, choc chip also and freeze them as you can do this if you are unable to eat them all yourself.

    Sorry if it seemed silly of me to ask that, but I spent ages going through recipes online and in cook books and most of them needed self raising flour! So thought I'd see if people knew of things that needed plain flour instead. :)
    Dogs and Cats are better than kids because they eat less, don't ask for money... and if they get pregnant, you can sell their children!

    WEll today I tried my hand at Raspberry Muffins which taste good but they are a bit mis-shaped. I have the correct muffin cake cases but put them in a fairy cake baking tray. at least I have tried the receipe and they are nice but not good enough to take to a coffee morning. Will need to see if we can pick up a muffin baking tray cheaply since I have lots of muffic cake cases.

    Also tried the weetabix brownie receipe with daughter who is a toddler and she loved helping and likes the cake, as well as hubbie loved it. Thanks for the receipe.

    My banana muffins come out mis-shaped, its usually the ones where I've scraped that bit extra in and probably over filled the case. Also my recipe says if you have spare containers in your tin to fill with water to help them cook more evenly. I don't know if it works or not but I always do.

    Does anyone know any easy things to make with lots of flour? I have two big unopened bags of plain flour that need using(best before date nov 2009 and I need the space!).
    I don't have any baking powder but I can get some if it will make using the flour up easier! :)


    Shortbread fits the bill. ALways in the ratio 3:2:1 Plain flour:butter:sugar

    Rub butter into flour and then when it looks all crumbly add the sugar and press the mixture into a swiss roll type tin. Cook in a low oven (130-140)for about an hour, should still be fairly pale. Cut into fingers/squares while still warm.

    Muffins/fairy cakes can put loads of variety in these, cherries, choc chips, sultanas etc
    Bread Pudding - I save all the crusts from sliced loafs in the freezer and when I have a bag full I mash them up with some water and milk and sultansas, then add some sugar and cinnamon. Put in a loaf tin and cook for about 20-30 mins til its 'dried out'. I slice it wrap each slice in cling film and freeze. Great treat and cheap too! I made one this afternoon!
    Although I don't freeze it flapjack seems to last ages in a tin
  • I have just discovered how easy shortbread is to make, got a tray cooking in the oven right now - can anyone tell me if it freezes? if so would you freeze it cooked or uncooked? I was thinking a batch in the freezer would go down very nicely at christmas:rotfl:

    Lidl are selling muffin trays at the moment for £1.99. Not sure what they're like but i'm thinking of popping over tomorrow to have a look.

    Well we visited lidel for a few other things and managed to pick up a 12 muffin try for £3.99 which is not bad price but they did have the 6 muffin try for £1.99. So next batch will hopefully be better shaped - time will tell.
