Killer recipe for carrot cake wanted

Does anyone know of a really, really, really good recipe for carrot cake please? :P

    Here you go, though I must warn you....it's truely addictive!  ;D

    cup of white sugar *
    cup of mazola oil *
    3 eggs (add one at once)
    11/2 cups self raising flour
    11/2 tsp cinamon
    11/2tsp baking powder
    1 tsp baking soda
    1/2 tsp salt

    * beat these on high for 3 mins
    then add eggs
    then add dry ingredients
    then add the following;
    1 tsp vanilla essense
    21/2 cups grated carrot

    bake for about 35-45 mins @350f/160c/gas3/4

    for the topping

    4oz creamed cheese
    11/2 cups icing sugar
    2 tbs soft butter/marg
    1 tsp almond flavouring

    mix all these until smooth, if it's not thick enough, add a little more icing sugar.

    Ingredients:
    12 ounces finely grated carrot

    8 oz wholemeal flour
    8 oz brown sugar
    4 teaspoons baking powder
    4 eggs
    Half cup chopped walnuts
    Zest of an orange
    3 teaspoons cinnamon
    1 teaspoon salt
    Half a cup melted butter or oil

    Ingredients for Icing:
    3 oz cream cheese

    Half pound icing sugar

    One teaspoon vanilla essence

    3 oz butter

    Method:
    Mix the all dry ingredients together. add the walnuts and carrots, mixing well. Take the four eggs, beat them adding them along with the butter and oil to the mixture.

    Having mixed well, pour the mixture into two, one pound rectangular loaf tins. A nine inch round cake tin can also be used.
    Bake for an hour in a pre-heated oven at 350F/180C/Gas Mark 4

    Make the icing by beating the ingredients together and, once the cake has cooled, decorate the top and the side with the icing.


    Ive used this twice now and it was divine

    OMG Saint Delia on-line!!! Had no idea! Thank you sooo much for this. Carrot cake with mascapone looks yummy! Put on half a stone just thinking about ti :(

    Has anyone tried chocolate beetroot cake? You use those packs of vacuum packed beetroot. Simply divine (I've even had it as a birthday cake one year!!!). Very scrummy. If anyone wants the recipe, I'll put it on the site.......
