    I'm a bit late to the party but I'll throw mine in for good measure - it came to me courtesy of a good friend in Canada and has pineapple in it too. (she also gave me the best ever golden butterscotch bread pudding recipe)

    All weights are US measures (not Canadian for some reason!)

    2 cups caster sugar
    1.5 cups veg oil
    3 eggs
    2 tsp vanilla extract
    2 tsp cinnamon
    2.5 cups all purpose flour
    1tsp salt
    2tsp baking soda
    2 cups grated carrot
    2 cups flaked coconut
    1 can (8oz) crushed pineapple

    Preheat oven to 350f or 180c. You will need a 9x13inch tin

    Combine sugar, eggs and vanilla then add flour, cinnamon, salt and baking soda.
    Fold in carrots, coconut and pineapple
    Bake for 50 mins or until skewer comes out cleanly

    I then cover with cream cheese frosting

    2 (8 ounce) packages cream cheese, softened
    half cup butter, softened
    2 cups sifted icing sugar
    1 tsp vanilla extract

    Cream the cheese and butter together then add vanilla. Finally mix in icing sugar.

    Think I may make it this weekend - then again I'm tempted to make her bread pudding - off the dig out that recipe now!
