This is the one that I've used and got rave reviews for - courtesy of Gordon Ramsay.

However, I DID leave out the orange/lemon juice bit - sorry Gordon. I then made a cream cheese/icing sugar topping, covered the top with it and pressed halved walnuts into the icing. Wrapped in clingfilm and put in the fridge to chill the topping before serving.

Im not sure where this recipe came from but I adapted it slightly for me. Not only is it lower in calories (im on slimming world diet) but it tastes sweet and keeps really moist.
8oz Grated carrot
2oz of brown sugar
2oz of sweetener (alternatively just use 6oz of brown sugar)
6 fluid oz of veg oil
2 eggs
1 teaspoon vanilla essence
6oz plain flour
2 teaspoon bicarb of soda
2 teaspoon of cinnamon
2 teaspoon mixed spice
1/2 teaspoon salt
Mix oil, sugar, eggs and essence together and beat really well.
Mix grated carrot,flour, bicarb,cinnamon,mixed spice and salt. add to the oil mix.
Pour into a tin and bake in oven at 180 degrees for 1 hour and 15 mins.
(i use a blender as mixes better this way i find)
For the topping you need
1 tub of mascapone cheese
1oz softened butter
1/2 teaspoon vanilla essence
2oz icing sugar
Mix together and spread on cake.
I make mine in 2 loaf tins as easier to slice into portions and keep it in the fridge. It stays moist for 2 days like this. not sure is it would stay moist for longer as it never lasts longer in this house.
Id like to add that many of my friends request this for their birthday present from me as they love it. I only give 1 tin though as the other is for me!!!

I have some carrots that are passed there best so I had decided to be MSE and use them up in a carrot cake.
6oz self-raising flour
4oz brown sugar
2 tsp of baking powder
1 tsp ground cinnamon
3 eggs beaten
1/4 vegetable oil
1 tsp vanilla essence
8oz grated carrots
Heat the oven to 180c or 350F gas mark 7. Cook for 30 minutes.
Easy. Carrot cake not only tastes great, but is bursting with goodness and vitamins.If winter comes, can spring be far behind?

Hi Honey, I am going to use 12 paper cases on a bun tray.
I am thinking of packed lunches as that might be easier than taking a slice from a big cake.
If I was going to use a baking tin I would go for a 7" round tin that I would make a victoria sponge cake in.If winter comes, can spring be far behind?

Anyone have a tried and tested recipe for an eggless carrot cake? I tried the one in the index and couldn't get it to work, (No offence intended to OP, just my baking 'skills!).
Can i just add in a mashed banana instead of each egg in one of the recipes posted here?

Hi Caroline, I have made Rachel Allens cake many many times and people are always asking when the next one is coming! The topping is gorgeous and its so easy to make. It is really moist and lasts about a week (although i bet it won't hang around that long! )
