Does anyone have a recipe for a nice icing/filling for carrot cake.
Normally I just use butter cream but it seems a bit plain. Tried one I found on the BBC food website last time but it wasn't great.

Whizz together 225g of slightly softened butter, same of philadelphia and 250g of icing sugar. When it's thoroughly combined add 225g of mascarpone - you need to go easy mixing it in because if you overdo it it'll curdle! I also like to add a few teaspoons of orange oil when I add the mascaprone, but it's not essential0

I tried using the Sainsbury's basics cream cheese, it was disgusting, it went all watery as soon as it mixed with the icing sugar and curdled with the butter, I had to throw the whole lot away and start again.
TBH, I find using mascarpone/Philly etc makes it just too expensive, I use butter crream but mix orange zest into it just to give it a bit of oomph.Accept your past without regret, handle your present with confidence and face your future without fear0 -
you cream the butter and icing sugar together THEN add the cream cheese with few drops of vanilla or whatever flavouring you want.0
