Killer recipe for carrot cake wanted

    Does anyone have a tried and tested recipie for and cream cheese topping for carrot cake. It's in the oven at the moment. I normally leave it plain but this is for a bbq at the neighbours this evening.
    Any ideas gratefully received

    45g butter, softened,
    170g cream cheese (full fat)

    Beat these two together well.

    Add 300g icing sugar (sifted) and mix well.

    You can also add lemon juice and/or vanilla essence to taste, but I don't bother.

    I also bung the butter and cheese into the processor and when combined, add in the icing sugar slowly - much easier and quicker than by hand :)

    I also then add chopped walnuts, or chocolate to the top to make it look fancier :p

    Can someone tell me why you have to have oil in carrot cake and what it would be like without it.

    I don't suppose you really have to have oil in it, but I do find that it keeps it really moist.

    My recipe calls for oil but doesn't have any other 'fats' in it (unless you add some to the cream cheese for the topping).

    Im looking for a carrot cake recipe that is super tasty.

    My friend is coming to stay with me this weekend after a berievement so and im packing up a picnic to take to Barafundle bay (to be OS and avoid having to buy food for the day). Trying to plan a fun filled weekend to cheer her up and take her mind of things, so im trying to pack it up with all her favorite food, carrot cake is the 1 thing she adores, so either muffins/cupcakes or a cake would be ideal. I think I have most ingrediants just need carrots from farm shop Thursday.

    I have never made one before so would love your help/advice please!:o

    Well if you want to be lazy I've used the Betty Crocker cake mix (well OH has LOL) and it gives an acceptable result - don't use the frosting though (bought seperately and not very nice - make that yourself from icing sugar and cream cheese).

    Failing that, if you want to be 'good' and bake one from scratch - here is my MIL's recipe:
    Carrot cake.
    10 fluid oz vegetable oil
    12 oz soft brown sugar
    10 oz self raising flour
    2 teaspoons baking powder
    2 teaspoons cinnamon
    1 teaspoon salt
    4 eggs
    14 oz grated carrots
    Mix ingredients and bake in a greased, lined baking tin for approximately
    40 minutes. 180C, gas mark 4.
    Check with a clean knife after 40 minutes, push knife into cake and remove. If the knife is clean then the cake is cooked.
    Topping.
    3 oz creamed cheese
    2 oz butter
    9 oz icing sugar
    2 teaspoons vanilla essence
    Mix ingredients and spread onto the cake when it has fully
    cooled.

    My very great friend shared this with me:

    1 tbsp lemon juice
    1/4 pint milk (150mls if you are metric!)
    4 oz butter (100g)
    8 fl oz runny honey (240ml)
    8 oz grated carrots (225g)
    1 egg
    4 oz wholemeal flour (100g)
    4 oz strong flour (bread flour) (100g)
    1 tsp baking powder
    2 tsp bicarb
    1tsp cinnamon
    4 oz raisins
    2 oz walnuts chopped (she uses pecans)
    4 oz chopped dates
    1/2 tsp fresh grated nutmeg

    Makes an eight inch round cake.

    Add the lemon juice to the milk and put aside to curdle. (No really!)
    Put butter and honey into a pan (I use the microwave on defrost) to melt.
    Add carrots, dates, raisins and milk. Beat egg and add.
    Sieve the dry ingredients together and add wet from melted ingredients.
    Stir add nuts and bake in suitable tin for an hour (could be 15 mins more IMO) Cool in tin before transferring to a cooling rack.

    Gas 4/ 350F
