    There is a great on on the thread - family of five storecupboard challenge - will try to post link to thread - the thread is loong but some great recipes on it - I would go from the back as it was posted recently

    There is a wonderful carrot cake recipe in the Cranks Cook Book - it uses coconut and raisins and really is to die for.

    ooh I have that book just looked it looks yummy :D Thanks!!!! It'll be nice to have a variation to try

    please could anyone give an easy recipe for carrot cake with an icing tpopping many thanks.
    Before you point fingers,make sure your hands are clean !;)
  • Orange frosted carrot cake (12 squares)

    225g /8oz Self raising flour
    1/2 tsp ground mixed spice
    150g / 5oz soft dark brown sugar
    150g / 5oz carrots, peeled and grated
    2 medium eggs
    150ml / 1/4 pint corn or sunflower oil
    2 x 15ml spoon (2 tbsp) milk

    topping:
    50g / 2oz butter
    2 tbsp orange juice
    1/2 orange, grated rind only
    225g / 8oz icing sugar

    1 Heat oven to 180C/gas mark 4. Grease and line the base of an 28x18cm (11x7 ") oblong tin
    2 Place the flour and mixed spice in a large bowl and mix thoroughly. Stir in sugar and carrots. Make a well in the centre and add the eggs, oil and milk. Beat well with a wooden spoon until evenly blended.
    3 Place in the prepared tin and bake for 40 minutes. Turn out from the tin and cool on a wire rack.
    4 Melt the butter, orange juice and rind in a saucepan, beat in the icing sugar until smooth. Swirl over the cake and cut into 12 squares.


    This is the easiest recipe I've found - taken from the BE-RO flour home recipe book (available in Morrisons):D
