Killer recipe for carrot cake wanted

This one always comes out lovely & moist. Its also quite a large cake, but it still doesnt last very long in our house:o
300g plain flour
200g soft brown sugar (though ive often used caster)
4 eggs
250ml oil
2 tsp baking powder
1 tsp bic of soda
200g grated carrots
2 tsp cinnamon
150g chopped walnuts (optional)
Cream cheese frosting
125g butter (nicer if you substitue some of the butter for honey)
50g icing sugar
250g cream cheese
Sift the flour, cinnamon, baking powder and bic of soda, stir in the sugar.
Beat the eggs with the oil & add carrots, then fold in to the dry ingredients. Fold in walnuts if using.
Put into a deep lined cake tin & bake for 1 hr 20 mins, check using a skewer to see if comes out clean ect.
When cool mix all the topping ingredients together & spread over the top.0 -

Hi hun
I am not really too good with links but there was a thread on here a few days ago about cakes made with oil and there was an excellent Carrot Cake on there and it was so easy and yummy - I made 2.
Will look and post if I can find it if not a search for cakes with oil might help.

Would a loaf tin be ok to make this in or would a round sandwich tin be better?0 -
