Killer recipe for carrot cake wanted

Hi all
I have made a carrot cake for the first time today and need some help with icing it.
I have bought some cream cheese (tescos own Philadelphia type stuff) and I have icing sugar.
Can I make with this if so what kind of quantities, or do I need to add, butter, cream??
BTW don't have any butter only buttery marg - hope this would be ok.
Cake is due out in a couple of mins, I would prefer to ice today - as intend on taking it to PTA meeting in morning and go straight in after dropping dd off.0 -

I never measure these things out - just keep adding things and tasting a bit as I go on (tough job but someone's got to do it.....)
cream cheese plus icing sugar sounds great. I once did a topping for a carrot cake which added lime zest and juice as well

rightho - icing made and now setting ontop of cake in fridge - I did make rather a lot in the end.
Like Alex I kind of kept adding as it didn't seem thick enough - It will probably be really thick once set now!!
anyhow I have frozen the surplus - hopefully it will be ok to use on another cake if tomorrow turns out ok.
One success though dh was impressed and wanted to try , I said it was for tomorrow for PTA meeting so he said would wait and see if any left otherwise I would have to make another at weekend!!0 -
When I make a carrot cake I ice it using mascarpone cheese & icing sugar. Tastes delicious!0

hiya, im after a carrot cake recipe if anyone has one. Ive googled it but there are so many and all so different....if anyone has one they can recommend its greatly appreciated.xx0

I use this one and it comes out perfect every time.. its large so you could halve the ingrediantsCARROT CAKE
8oz Wholemeal Flour
8oz Soft Brown Sugar
4tsp Baking powder
4 Large Eggs
Half cup oil or butter
Little salt
Hlf cp chopped Walnuts
2tsp Cinnamon
Zest of a large orange
Topping
4oz full fat cream
1tsp Vanilla ess
Icing sugar
3oz butter optional
Method
Mix sugar, eggs and oil in large bowl. Stir in carrots, walnuts and orange zest. Sieve tog flr,baking pwd and spices and add to egg mixture..
Pour into a lined oiled tin and bake 45 mins at 180* or 160* in fan assist oven.
Beat the cheese and vanilla esc and icing sugar tog and spread over cake when cool

this one is my favourite - it is a super healthy one, too!
115 ml honey
50 g soft sunflower margarine
75 g sultanas
250 g finely grated carrots
grated zest of one lemon
140 ml plain yoghurt
2 eggs, beaten
170g self raising (wholemeal) flour
40g crushed poppy seeds
1 tsp ground cinnamon.
1. heat honey, margarine and sultanas together in saucepan and stir till combined.
2. take off the heat, stir in carrots, lemon zest, yoghurt and eggs
3. stir in the flour, then poppy seeds and cinnamon.
bake at 180° for 1 hour, then reduce heat to 150° and leave for another 30 minutes "until the edges of the cake come away from the sides of the tin".
the source of this recipe is 'Healing Foods' by Miriam Polunin. she also provides an icing for it made with fromage frais and honey, but i have never tried it because I am not that keen on icing.

Tried & tested for many years, its a favorite in our house
Requires food processor - or can be done by hand
Carrot Cake
2 eggs
1/2 tea spoon ground cinnamon
1/2 tea spoon bicarb soda
2 medium carrots, peeled & roughly chopped (grated if you dont have a food processor)
185g butter/marg (i use vitalite) - melted
3/4 sugar (white or brown can be used)
1 cup/mug of s.r flour (can us wholemeal also, works better with brown sugar)
1 cup/mug of sultana's (optional)
or if you want to add walnuts, then add 1/2 cup & half cup of sultana's.
in the Food processor place the eggs, soda, cinnamon & carrots, whizz until a thick liquid is formed
add the melted butter & sugar
whizz
add flour, (fruit & nuts if your adding them)
whizz untill combined
place into a loaf size tin (i use 2 x 1lb loaf tins), but you can use a 2lb tin
bake in moderate oven (gas mark 5) sorry, dont know number for electric, for about 50mins, or until cooked in the middle, by checking with a skewer.
You can use a butter creamed icing for the top, but the cake never lasts long for me to do this!
When I say measurement by cup/mug, please use the same cup/mug through out.
