    Has anyone tried chocolate beetroot cake?  You use those packs of vacuum packed beetroot.  Simply divine (I've even had it as a birthday cake one year!!!).  Very scrummy.  If anyone wants the recipe, I'll put it on the site.......

    Ooooh..does anyone know that recipe for some sort of spongecake where you put geranium leaves in the bottom of the tin, (well some sort of house plant leaves!) :P

    I'm sure i have a recipe that I got from an ASDA mag for mashed potato/choc cake! :-X

    Ooooh..does anyone know that recipe for some sort of spongecake where you put geranium leaves in the bottom of the tin, (well some sort of house plant leaves!)   :P

    No I've heard of it though - you use the highly scented indoor geraniums and I know you can make one with rose and/or violet petals and lemon balm leaves also.

    I'm sure I remember a cake being made with courgettes on TV years ago  :-/

    Anybody ever made/eaten one and lived to tell the tale?  ;D

    I love courgettes , but not too sure about them in a cake  :-/

    Courgette cake is totally scrummy! Make as you would carrot cake but put less liquid in as courgettes contain more water than carrots.

    It is also possible to make courgette fritters, I don't know the recipe off the top of my head but will ask my mum and then will post it.

    It used to be one of our favourite pudding as children, absolutely divine stuff!

    Courtesy of my mum, here goes the recipe for courgette fritters:

    Grate a couple of large courgettes and put in a colander to drain of liquid for 1 hour then squeeze as much water out as you can with your hands

    mix with eggs, flour and milk as if you were making a pancake batter, add a pinch of salt and a pinch of baking powder.

    Make sure the batter is not too thick otherwise the fritters become hard.

    Drop spoonfuls of this batter in hot oil, drain fritters on crumpled kitchen paper and toss in caster sugar.

    a friend of mine made some recently. it was really lovely - though looked slightly strange with green stuff in!!! not too sweet, and a nice alternative to carrot cake. will get the recepie next time i see her and post it.
