hi all,
just on the look out for an easy to follow carrot cake recipe as I'm definitely no skilled baker!
I tried to make a weightwatchers one last night and it was a disaster, although hubby still ate it - but then that doesnt surprise me!!! :rotfl:

Havnt made this one yet myself, but my friend did yesterday, and it is delicious!!!!
8 oz s/r flour
1/2 tsp ground mixed spice
5oz soft brown sugar
5oz grated carrots
2 eggs
150ml corn or sunflower oil
2 tbsp milk
Heat oven to 180o, 350F, gas 4. Grease a 11 x 7 oblong tin
Mix flour and spice. Then stir in sugar and carrots. Then add eggs, oil and milk and beat well until blended.
Bake for 40 mins, cool on a wire rack.
For frosting,
2oz butter
8oz icing sugar.
1 tbsp milk.
Beat together, add to cooled cake.0 -
Catowen - I got myself a blender yesterday (£3 at a garage sale) - could i make the mixture in that? I would guess so, i normally use a hand/stick blender for my cakes.0 -
I'm making Delia's low fat carrot cake (link given in earlier post) for tomorrow - it's our fave :drool: and really easy. Don't need a mixer - easy to just mix by hand.
If you don't have Quark (low fat cheese) use Philly light (or normal! just higher fat!) or store's own brand.

I make this as a loaf cake (couldn't be more simple ~ if I can make it anyone can)
4oz Marg/Butter
4oz Sugar
5oz SR Flour
2 Tbsp Milk
2 Eggs, beaten
2oz Desicated Coconut
4oz Raisins/Sultanas
1 Grated Carrot
1) cream marg/butter and sugar together
2) mix in milk, eggs, coconut, raisins and carrot
3) sift in flour
4) mix it all up together
5) put in a greased loaf tin
6) Bake at Gas mark 5/190 C/375 F for 40 - 50 mins or until test knife comes out clean when inserted into middle of cake.

You can also drizzle over some icing made from icing sugar and lemon juice, although I don't usually bother.0
