I grate and freeze harder cheeses like cheddar. Could you use some to make cheese sauce for broccoli and cauliflower?Bossymoo

Try using in a soup/sauce. Toss into pasta etc. Hard cheese can be frozen, the smoked cheese could be and used in cooking.
Not all cheeses will freeze well especially soft cheeses such as cream cheese and cottage cheese which can become watery and grainy in texture. (Freezing can also affect the texture of some hard cheeses, making it crumbly and harder to use).
If you do freeze cheese, best to grate it first and then store it in an airtight plastic bag (freezing blocks of cheese will lose a lot of moisture and become crumbly).Everything has its beauty but not everyone sees it.0 -
I would have thought they should be fine to freeze, just wrap tightly in cling film/similar and pop in the freezer. We will be doing that with a couple that we bought for Christmas as for one of them we bought a small truckle!
Although it depends in the type. I'm guessing it's wensleydale/cheddar/Stilton with the added yummy bits?************************************

Thanks everyone, think I was having a mental block! Will have some fancy cheese on toast, might try making the pie and macaroni cheese tomorrow and the day after then will freeze the rest0

Can I piggy-back on this thread and ask for hints for using up brie please! I'm fine with other cheeses, but my mind's gone blank about how to use up brie and I've got about 500g of the stuff laughing at me everytime I open the fridge door0

I love brie in a toasted sandwich - this recipe is particularly :drool:. (I know it says camembert, but it's just as good with brie!)
islandhoppa - when you get round to using the chilli cheese, try it stuffed into tomatoes or peppers and baked until golden. It's fantastic as a side dish with something like sausages, or as a light meal with some salad and crusty bread.Back after a very long break!0 -
Bacon, brie and tomato go really well together in baguette type bread. If in a hurry I grill the bacon and top with the brie and tomato and shove under the grill for a couple of minutes until the brie begins to melt.
Put it in a George Foreman type grill to make a Panini and it's to die for.0
