What to do with leftover bits of cheese?

    I agree with freezing the hard cheese - the stilton and cheese, it's perfectly acceptable for cooking dishes such as cheese on toast, welsh rarebit, the blue stilton can go on top of a steak during its last few minutes of cooking, etc.

    Yep, grate it and freeze. Doesn't matter if you mix it up it's all usable.

    Not very money saving but if the cheese is free.....

    Anyway I was born in the 70s!

    Serves 4

    1 lb cheese grated
    1/2 pt wine
    4 tsp cornflour mixed with small amount of wine, water or schnaps

    cubes of bread to serve

    Heat wine, melt cheese in wine, add cornflour. Stir on a gentle heat for a couple of minutes, serve. I am told you can put your fondue in a slow cooker for to keep it warm if you don't have a fondue burner but haven't tried this.

    Cheeses need to be good melting cheeses. I've not tried Brie but I'm sure the stilton and other cheeses would work.

    Cider works well instead of wine. I have even used beer with cheddar cheese and added mustard to make it a bit like rarebit.

    We make our own wine and cider so I suppose its a little old style! :beer:

    We even make it on the Trangia when we go camping...
