    Hi all

    Well done to the losers and STSers and comfort and hugs to the gainers - sorry I did not make a note of all your successes, as I have been off the computer for a couple of days and so many pages to catch up on my return today!

    I HATE THE WEATHER!!!! The continuous rain, wind and cold weather are really getting me down, plus I got a bit of a nagging cold, not one of these full-blast ones that come and go in three days but one of these sneezy-feeling-weakish ones that cling...am feeling fed up and hormonally challenged (what do you call perimenopausal PMT? Hell)

    I haven't followed any diet this weekend and went with my hormones, which led me to the biscuit tin. Ah well.... I also had a Chinese meal, so this morning at the gym I expected a big gain, instead to my surprise I found that it registers 13 stones (this is the gym scale that lies, mind you, but it shows a loss nevertheles!). So I should be rejoicing of course, instead I am feeling so peeved off by everything that all I can think of is that maybe I have some terrible illness. Can't win when I am feeling like this.

    Anyway, I managed to drag myself to the gym, weather an'all, and did a 1 hour aerobic class. At least I am not behaving like a slug (even if I feel like doing so).

    Food:

    B - porridge with toasted sunflower seeds and fresh blueberries

    L - lentil pasta soup with carrot and onion pieces, low fat rhubarb yogurt

    D - (planned) mushroom, spinach and asparagus risotto with feta cheese, strawberries with 0% greek yogurt, or cottage cheese, whichever I get from the shop later.

    Any snacks are left to my voluble hormons, for the time being, I am not in a position to put myself under too much pressure or I shall pop! (Or I shall pop one or two members of my family, and that wouldn't do!).

    I enjoyed reading about the polenta stuff in the thread. I love polenta and use it quite a bit. Apart from being free on SW, it is very nutritious and versatile.

    Use it for breakfast, cooking it in milk (or soya milk), as a porridge, and serve it with toasted nuts and seeds on top, or cook it solid with water and let it settle, then cut into slices, and grill the slices as if it was toast, top the grilled slices with whatever you like (savoury like egg, mushroom, baked beans etc, or sweet like jam, chocolate spread etc...).

    For main meals cook it to a thick porridge consistency and serve covered with HM tomato sauce (passata, onion and basil all cooked together) and a good sprinkling of cheese - although cheddar will do, parmesan is even better but for a real treat sprinkle crumbled blue cheese on it - if we weren't on a diet I would suggest gorgonzola, but that would really break the calorie bank. Sainsburys do a reduced fat blue cheese which tastes quite nice.

    Very nice also stuffed: cook polenta to porridge consistency, oil a baking tin with frylight and pour 1/2 inch thick polenta in, cover with a rich tomato sauce made with lots of onions, and veg to your liking, mushrooms etc - for meat eaters a good sausage sauce also very nice - top with grated or crumbled cheese and cover with another layer of polenta, then spread some sauce on top, sprinkle with cheese and bake until cheese on top is bubbling.

    Buon appetito. Perhaps tonight I am going to have polenta with spinach mushroom and asparagus sauce instead of risotto!

    Can I join in please? Mrs M has been very encouraging but it has taken me a while to get over here.

    I have seven stone to lose so I am here for the long haul.

    Eating healthily, and aiming to be 8lbs lighter on my first weigh in on July 1st.

    I am 5'4'' weighing seventeen stone, size 24 and panicking!!!!!!!!!!!!!

    RS - thanks for asking about DS - he is ok ATM, got his car back on the road so he's happy. We're nervous wrecks about him driving again cos of his accident last year but we'll have to get used to it. Fingers crossed his new job is going well too. I hope your examination goes well on Wednesday!

    Caterina - thanks for more info on polenta - I must try some - I'm just not very adventurous - I often buy healthy things and then they sit in the cupoboard for ages.:rolleyes:

    Hi Sylvia, I'm not sure what the others prefer, but for me if you could post the all together, I can cop and paste them to my folder.

    I'm just starting out on home cooking after living on ready meals for years, so, I may ask you for further advice if I have any difficulties.

    Evening folks :hello:
    Feeling much better now having spent half the afternoon asleep in the chair :o

    I had beans on toast - OH's HM multigrain for lunch I was starving when I woke up so I had another slice with strawberry jam then half a melon and a banana:rolleyes: I did 'syn' the bread and jam !!

    Quorn sausage, spring onion mash and cabbage for tea so I'm now comfortably full, I might have a yoghurt in a bit if I get peckish.

    Caterina - thanks for the polenta ideas :T I quite often do fingers with mixed herbs and have it in for nibbles or have it instead of toast with a breakfast. It's delicious done like mash and served with a rich mushroom ragout.

    Ok,

    I will write the shorter ones for now,

    KING PRAWN SAG 1 WW POINT - 160 cal
    (SERVES 2)

    Ingrediants

    Low fat cooking spray
    1 medium onion chopped
    1 garlic clove crushed
    2.5 cm (1inch) piece of fresh root ginger, grated
    1/2 tablespoon medium strength curry powder
    1 teaspoon of ground corriander
    1/2 teaspoon chilli powder
    400g can of chopped tomatoes
    200g (7oz) raw king prawns, heads and shells removed de frosted if frozen and patted dry with kitchen paper
    100g (3 1/2 oz) baby spinach

    1. Heat a non stick pan and spray with low fat cooking spray
    stir fry the onion for about 5 mins until soft

    2. Add all the ingrediants to the pan. except the prawns and spinach and heat gently until simmering, then cover the pan with a tight fitting lid and cook for 10 mins
    3. remove the lid, add the prawns and spinach and stir fry for 4 - 5 mins until the prawns are bright pink & the spinach has wilted.

    season to taste and serve.

    Evening My Lovelies!!

    what a lovely day its been here today, have sat in garden and repotted the plants that needed it, have even caught the sun on my arms!

    B - none

    L - large bowl of oatiflakes

    D - scotch egg and salad (salad from my garden, yeah its finally ready!!!)

    done loads of walking, have my determined head on and keep thinking of all my holiday clothes that i will fit in to!!!! hopefully my final weigh in of MIM chalenge will be a good one!!

    Hello :0)

    Thought I would check in and say hi to you all. Cor what a weekend. Realised that without walking to school and back trying to build up to 10,000 steps is a killer.

    Had a wander around a tesco extra this morning picking up a few bits (great for the steps, not so great for the finances). Then, wait for it....................... I actually went for a 45 minute walk in the rain. Music on and off I went. I was completely soaked as I have not yet plucked up the courage to wear 'practical clothing' and do not own a waterproof coat. It was quite invigorating though and I have done 11,276 steps so far today.

    Evening of slobbing ahead so just got to stay away from those biscuits!!!!!

    Good luck to all those weighing in this week. I should have been weighed in tonight but no class due to bank holiday, got to do the rest of this week and hope for a good result!

    Hi everyone, just checking here, will go back and read what's been happening in a minute.

    Been busy, spent lots of time baking and cooking yesterday and Sat, dh's walking buddy here Sat and then MIL for a meal last night. Been singing at the Acoustic Festival of Britain today, which went really well, but eating didn't go specially well! Had a hot dog!

    Breakfast was good, oats. Dinner was OK, veg and a bit of chicken left from last night, summer pudding (hm) to follow.

    Hope you're all OK.
