I second the special fried rice-type dish. There's a good tutorial on videojug if I remember rightly. It's very tasty.

I make a rice salad and it is be-yew-di-ful.You may not have all the ingredients but with a little imagination you could substitute some of them.
MIx your left over rice with: a handful of dried cranberries (you could use raisins maybe), one grated carrott, one stick of celery diced, one spring onion chopped, and sprinkle a few chopped almonds over the top.Mix in a dressing made with orange juice and olive oil(sorry can't remember the quantities).
You could have it with a couple of slices of ham or a piece of cheese.

If the rice is plain (no salt or herbs or stock etc) then you could make a quick rice pudding out of it.
Or you could make some egg fried rice or a quick rice salad using veg and herbs...
Alternatively, rice can be frozen - just make sure you reheat it well when you come round to eating it.0 -
I fry up loads of mushrooms ,sweetcorn and peas ( sometimes chopped onion ,pepper and garlic )and chopped ham or chicken too ,if i have them in and mix into the cold rice and season well0

You have to be a bit careful reheating rice
Rice that has been cooled then reheated thoroughly is perfectly safe. If it wasn't there wouldn't be such a thing as egg-fried rice which is what I recommend you do with your rice;)
Fry whatever veggies you have around. Spring onions are good plus carrots, mushrooms, beans and some frozen peas. Add your rice stir well to heat through. Tip in a beaten egg and stir to cook, splash on some soy sauce.0 -

Just did this. Used onion and carrot fried in chilli and oil, threw in sweetcorn , peas and peppers (all froxen), then chopped ham, rice, cooked, egg. Soy sauce and topped off with vinegar (always have it on fried rice! )
