I like to use leftover rice in soup - either a tomato soup or you can make that lovely greek soup with lemon and egg. Someone posted a recipe on here a while back and it is really nice.

I have a few tablespoons of rice left. Not a whole portion, but it feels like too much to throw away. What shall I do with it? Suggestions please!

Turn it into a rice salad. Add some chopped raw onion and peppers. a few cooked peas and sweetcorn. Mix up with some salad cream or mayo and add black pepper to taste.

I use left over rice to put in next day's salad bowl. Tastes great!

Put in a homemade soup to thicken it up.

That's a great idea... I have a box of turkey broth in the freezer, so I can just tip it into the top!

Whatever you do, cool it quickly and don't keep in the fridge beyond tomorrow! I think I might make a tuna rice salad wih it.

    Hi Mum40,

There's an earlier thread with some ideas that might help so I've added your thread to it to keep all the suggestions together.
