I like to use leftover rice in soup - either a tomato soup or you can make that lovely greek soup with lemon and egg. Someone posted a recipe on here a while back and it is really nice. That man is richest whose pleasures are cheapest. Henry David Thoreau0

I have a few tablespoons of rice left. Not a whole portion, but it feels like too much to throw away. What shall I do with it? Suggestions please!"Knowledge is knowing that a tomato is a fruit. Wisdom is not putting it in a fruit salad"

Turn it into a rice salad. Add some chopped raw onion and peppers. a few cooked peas and sweetcorn. Mix up with some salad cream or mayo and add black pepper to taste.

Hi Mum40,
There's an earlier thread with some ideas that might help so I've added your thread to it to keep all the suggestions together.
