I made risotto for the first time and it was edible, which in this house is a nice surprize. But I made double the amount of rice I needed & now it's sat in a pot looking at me. What can I do with it ? (politely ..:D )0

is it rice with the other veg, cheese etc in it?
If so, cool then form into patties or golf balls and coat with cornflour, putin the fridge or freeze and when you want them, just fry til golden - lovely!Just call me Nodwah the thread killer0 -

Has anyone got any ideas for using up leftover bashmati rice? We had chicken curry and rice tonight and made far too much of the rice.Debt free and Keeping on Track0

Freeze it for use another time. I always make too much in the rice cooker but freeze the left overs in freezer bags as a quick meal with portions of left over curry etc!0

Fried rice with vegetables and whatever meat or prawns you have around would be nice.0

I second Chezba. Rice is a staple in my freezer. Just run under tap til the block is broken up and reheat in the micro til VERY hot. Good with frozen portions of curry, chilli and quick enough to go with a quick stir fry.Dor0
