  • One of the supermarkets (Mr S) is re-advertising a recipe with chorizo and spring onions, fried together. Add cooked prawns and cooked rice and heat through thoroughyly. I think they have tomatoes in there somewhere - but I didn't have any when I made it the other night, so I added some fresh basil instead. Prawns were a bit of a treat - but frozen king prawns were half price at Mr T's!!

  • My sister works in a kitchen and is adamant that if you are going to put left over rice in the fridge it has to be put away within HALF AN HOUR. The food poisoning you can get from rice is apparantly quite nasty. Just thought I'd pass that on.

    After many years of wondering what to do with leftover rice, and using inventive solutions, I have finally learned what the right quantity to cook is! Now there is never any left or maybe a tiny bit (for the bird table).
    I used to measure it in a mug - but changed over to properly weighing the quantity on (electronic) scales. Usually they say 100g rice per person is right. But after trial and error i found OH and myself are exactly OK if I cook 150 g for the 2 of us, so that's only 75g each.
    Problem solved! I am not overly worried about re-heating rice (or anything) having lived in lesser developed countries, but it is nice not to have any leftovers to deal with. However soon I will be able to feed them to the chickens :-).
    It may seem to be a bit calculating to weigh your rice down to the last gramme, but I remember watching my grandmother peeling potatoes when I was about 10: she had old-fashioned metal scales in front of her and stopped peeling when the weight of the (peeled) potatoes equaled 2 pounds for 4 people. Even though she kept a pig so had good use for any surplus...

    Hi, made far too much rice last night!

    Can someone please point me to a thread which helps with using leftovers in vegetarian recipes?

    Don't know of a thread but perhaps you could saute the rice with some red onion, add a little stock to moisten it and melt in plenty of cheese for a delicious risotto?

    best thing to do with left over rice is throw it away. its high risk for food poisoning. very nasty stuff.

  • I made a bit too much basmati rice last night so have a fair bit left over. I've never used rice for anything other than to put it with bolognese or curry, that sort of thing.

    Does anyone have any suggestions i could make a meal for 4 (2 adults and 2 kids age 4 & 7) Got lots of frozen veggies but also have a courgette thats needs using (i've never cooked one before) would like some sort of meat and maybe a sauce too.

    Any suggestions welcome
