Your timescales are fine Sass - it's when rice is left out on the kitchen top overnight and then eaten the next day. As long as it's cooled and stored in a cool place (i.e. the fridge) within a couple of hours, then the bacteria haven't had time to even think about producing toxins to a 'I feel sick' level.

Making kedgeree is a good way of using leftover rice up. Fry onions in butter with a tin of herrings, add lemon juice, curry powder, cooked rice and peas and top with either chopped boiled egg or a soft boiled so it's still oozing yolk when it's cut in half, and parsley.0

I've had rice poisoning. Its not pretty!
Food poisoning from rice tends not to be an issue with home cooking more of a risk from catered food. Avoid rice at buffets and at restaurants that wouldn't normally serve rice.
I sometimes make a curried rice salad, very nice served with cold meats and chutneys.0 -
I made a curry last night for dinner and made far too much rice (wholegrain) and as a result Ive got quite a bit leftover thats been stored in a container in the fridge.
Any ideas on what I can make for lunch with it???

How about vinegar rice?
1) Place rice in bowl
2) Pour over 1/2 cup of vinegar
3) scrape it into your bin
4) nip down the chipy

I would have egg fried rice, and chuck in the veggies, that will be nice.0 -
I freeze rice in one person size portions. I have just put 2 boxes in freezer this morning left over from dinner last night. The next time I have any left over stir fry/curry etc I will use up some rice.
I put the frozen rice in a pan, cover with water and bring to the boil. Works for me.0 -
You have to be a bit careful reheating rice, but it should be ok fried today with veggies. To make chinese fried rice or african jolof rice. Alternatively if you have left over curry you can make a byriani. Or you could make rice pud!0

I'd do fried rice myself with some soy, spices, veggies, egg and ham... Fry it from cold until really hot to get the best result.
There is no problem at all reheating rice as long as you refrigerate it as soon as it is cool and reheat thoroughly- just like anything else really! Otherwise my whole family would probably be dead of food poisoning!!0
