I freeze very small portions (2 yablespoons each) and then use it as soup thickening. It's especially good in Watercress soup. (Hugh FW has a fab recipe)0

I get some leftover cheese and push it into the middle of a ball of leftover rice. Coat with breadcrumbs and fry until golden. These are one of my OH's favourite treats!
Before you freeze leftover rice stir the tiniest bit of oil through it. This stops it clumping together. (I still portion it up just in case though) before freezing.
Cooked rice makes loads of good things. Egg fried rice, pilafs, kedgeree, just off the top of my head. To be honest I just lob whatever needs using up in with the rice and hope for the best!
PS) Make sure you warm it up REALLY thoroughly before you eat it. Rice harbours a bug that breeds loads and you can get food poisoning if you don't warm it thoroughly.0 -
Add sweetcorn, peas, cooked onion and herbs to the rice and fill half red/green peppers. Roast in the oven. You can also top with cheddar/goats cheese.TL0

stir in some peas and sweetcorn and whatever else veg you wanna throw in and add a tin of chicken soup.. if you have some left over cooked chicken thats good too!! makes a yummy chicken supreme type thingIt only seems kinky the first time.. :A0

It freezes very well and you can't tell the dofference between fresh and frozen, I always cook far too much too.0

Hi,
you can make a rice salad with peas hard boiled eggs, tomatoes, capers, hams, tuna and whatever you have in the fridge.
You can also add whipped eggs, grated cheese and onion if you like and make an omelet.
Or you can make Chinese fried rice with vegetables eggs and shrimp or ham cubes.0 -

I often use left over rice to make fried rice. You can make it as plain or as elaborate as you want. Some good things to add are egg, onions, chicken, ham, peas, spring onions.....whatever you fancy really. A good glug of soy sauce and some sesame oil makes it look and taste better.
With left over rice you need to be careful and make sure it's chilled quickly and kept cold or frozen before reheating as it can contain a nasty bacteria (bacillus cerius). Always make sure it's piping hot before serving.

I know there are rules about reheating rice, but not being a frequent eater Im not entirely sure what they are.
Also are the 'rules' actually worth adhering too or will it be ok as long as I dont give it to the kids?
Thirdly any suggestions for meal ideas with it? I dont like spicy food and my egg fried rice is a bit hit and miss so looking for something else.0
