Haven't read the whole post, but would like to point out that there are mainstream Christian Churches that do not practise infant baptism (Baptists and Salvation Army spring to mind). This is because that they believe one cannot be a true Christian until one is old enough to understand and make that decision for themselves. Until then it is up to the parents and other Christians to 'show them the way'.
Therefore there are many Christians who believe that infant baptism does not make one a Chrisitian, it is a choice one has to make (or not) when they are able to.
Our son got baptised by his own wish at age 12.
I feel the OP should not have her child christened if she really does not believe in it, but maybe she can soften the blow by saying that the child will be able to decide later for themselves. Maybe the in-laws could even take them to church occasionally so that the children do have a free choice later?(AKA HRH_MUngo)

Imagine someone holding forth on biology whose only knowledge of the subject is the Book of British Birds, and you have a rough idea of what it feels like to read Richard Dawkins on theology: Terry Eagleton0
