  • This is my middle daughter's favourite 'cake'. Dead easy and no cooking involved - just mix all the ingredients together and refrigerate. (You can even vary the ingredients to suit what you have in). Only for those with a seriously sweet tooth.

    1 cup sweet biscuit crumbs
    1 cup glace cherries (halved)
    2/3 cup dried apricots (chopped)
    3/4 cup chopped walnuts
    1/2 cup coconut
    125g melted butter
    1/2 cup condensed milk (known as connie onny in our house)

    Line tin with foil. Spread mixture in and top with the following frosting - even moooore calories but yummy

    1cup icing sugar (add gradually)
    30g softened butter
    1teasp vanilla essence
    1 tablesp yoghurt
    mix the frosting ingredients together and beat until smooth.
    Spread over 'cake' and sprinkle on 2 tablespoons coconut to finish.

    Chill.

    When chilled cut up small
    9zillion calories per slice but delicious :D:D It actually gets better after a day or so if you can keep fingers away from it ;) and I agree Tiff, connie onny is also lovely on tinned fruit too

  • My gran used to make blancmange by making a packet jelly but making up the liquid with condensed milk and then leaving it to set (in a bunny shaped mould of course!)

  • I come across this recipe the other day. I haven't tried it but I've had good recomendations. It makes 120 biscuits and they freeze well.

    500g butter
    1 tin condensed milk
    1/3 cup sugar
    5 cups SR Flour

    Cream buttter & sugar. Add condensed milk and flour. Roll into teaspoon sized balls and press down with fork. Bake 10 - 15mins.

    Before baking can divide into different biscuits:

    1. Jam drops
    2. Milo & coconut.
    3. Sultanas, raisins or dates.
    4. Choc - Chips
    5. Cereal or coconut

    Mixture can be frozen into balls and then frozen.
    Don't worry about the world coming to an end today. It's already tomorrow in Australia. ;)

    I love eating it with a spoon! - straight away or once it's been boiled.

    Or I would make the caramel fingers, but I prefer it to be boiled for a couple of hours in the tins instead of boiled in pan.

    Or for a little variation, you coud make caramel cups!

    Make pastry, any sweet recipe will do and cut into circles and put into cases in a baking tray and cook until done. Fill with the caramel and grate some chocolate over. basically the same as the caramel fingers but slightly different!

    There should be little recipes on the side of the tin, too!

    Just an update I have made the Lemon Cheesecake recipe - it is in the fridge setting at the mo so once kids in bed may treat myselt to a taste!!!

    From licking the bowl it taste very good so am looking forward to it.

    Gonna do the caramel finger things over the weekend.

    Thanks again everyone for the ideas, guess it condensed milk may become a regular to my shopping list now.
  • Or at least that's what my mum called it...the best instant custard you can make..

    Couple of desert spoons of Birds Custard Powder (the original stuff)
    In a big bowl mix to a thick paste with a bit of water, whilst boiling a kettle full of water
    Now the hard bit - as the kettle is boiling pour water into the custard until it turns.. it will go from yellow to opaque and look like thick gel - that's enough water
    Then pour in as much condensed milk as you like to taste

    This doesn't keep so make sure you eat it all hot ;)

    Caramel fingers got made yesterday afternoon and half gone already! I had an early night and came down this this morning to find a quater had some how disappeared in the night!! DH looked sheepish but did say that stuff in the fridge was lovely. So some went in his lunch box!

    What have I started!!!

    Im thinking I might knock up some caramel shortcakes - off the indexed collection

    Makes about 24 pieces

    Ingredients
    400g packet of digestive biscuits
    125g / 4½ oz butter
    100g / 4 oz soft light brown sugar
    397g can condensed milk
    200g / 7 oz cooking chocolate
    200ml / 7 fl oz single cream (optional)

    Method
    Preheat oven to 200 C / 400 F / gas mark 6.
    Bash up digestives into crumbs.
    Melt 25g / 1 oz butter, mix well into crumbs.
    Press mixture into tin (I use a 9 inch square tin).
    Bake for 5 – 10 mins.

    Melt remaining butter and sugar together.
    Add condensed milk, stirring all the time until it looks like butterscotch.
    Pour mixture over biscuit base.
    Leave to cool.

    Melt chocolate.
    Mix with cream (optional).
    Spread over caramel.
    Leave to set.
    Cut into squares.
    Forget about your diet, enjoy!

    Will it work, or can I get it to work in any way???

    No - it has to be Condensed milk. They are two totally different products. Condensed milk has a very high sugar content - hence the caramel effect on cooking.
