    Stew them with a little sugar to make a goosberrry sauce. Aparently it's all the french do with goosberries.

    I serve gooseberry sauce (just stewed with a bit of sugar) with mackerel too.It's a really good combination.It cuts the richness of the oily fish.Rhubarb sauce is good with mackerel too for the same reason.

    We also had gooseberry sauce with roast pork last week which worked very well and was more seasonal than apple sauce at this time of year.

    I never stew my fruit with sugar for a sauce with meat. I prefer tart flavours, and just stir in maybe 1/4 to 1/2 teaspoon of sugar into the finished sauce.
    The gooseberry sauce for pork (which I'm having today) sounds great, would never have thought of that, but as you say thriftlady, more in season.

    My mouths watering now, I don't have my own gooseberries, fingers crossed the supermarket does !!!

    Intead of adding loads of sugar to get the sourness away try boiling them in diet lemonade.
    Its worth remembering that most diet drinks are very heavily laced with aspartame - which is allegedly extraordinarily bad for a body.

    Personally, I'd go with unrefined sugar - at least you know its just sweet and not likely to do you a damage!

    Yep,give me sugar anytime.I never buy anything with artificial sweeteners in.

    BTW to reduce the amount of sugar you need when cooking sharp fruit like goosegogs,add a tspn of bicarb,it neutralizes some of the acid and means you need less sugar.

    Quick question - I picked up a tub of frozen gooseberries from the folks this weekend. They are now defrosted, and in the fridge in a sealed ice cream container. How long have I got before I have to use them? I'm going to make a pie (or crumble), but haven't got time for a couple of days at least. Will they be ok? :confused:
