Hi all,
I've been sorting through the cupboards and have about 4 bags of desiccated coconut and no clue how to use it up.
I also have 1 tin of condensed milk. I'm sure there must be a recipe somewhere that can include both. Any ideas?

Coconut Ice is the obvious thing to spring to mind, it uses both the coconut and the milk. Or there's a Lemon Coconut slice here that uses both too, or macaroons here (scroll down a bit).0

Thanks, I'm going to try the macaroons and the anzacs. I love macaroons, and for some reason always thought they would be complicated. I've just discovered chocolate (how it survived in this house I don't know.) , chocolate macaroons coming up :j
I think the I'll try the coconut ice when my will power is a bit better, I love the stuff and would eat the lot in one go.0 -
50g margarine
2 medium sized eggs
100g sugar
200g desiccated coconuts
Put the oven on 175 (gas 3-4). Melt the margarine. Mix egg and sugar. Add the desiccated coconut and margarine. Let the mix stand for 10 min for the coconuts to swell. Take two teaspoons and spoon out approx 35 small mounds of mixture on a baking sheet or a greased baking tray. Bake in the middle of the oven for 10min. Remove the cakes from the baking sheet/tray before they cooled down. (It's a Swedish recipe, don't know if there is a British equivalent)0 -
You could also make Bounty balls - they use both coconut and condensed milk. I have the recipe somewhere but am going out so if anyone likes will post later. (think bounty bars)

Hello there! I am clearing out my baking cupboard and noticed I have not one but 2 packs of dessicated coconut! I can't quite remember why I bought them in the first place, but am keen to use them up rather than chuck them away. Can anyone recommend some recipes for dessicated coconut? I've done a search but can't find this question having been asked before (apologies if it has
