    Thank u Rosie for that easy coconut loaf recipe, just made one and my house smells lush! Just hope it tastes as good as it smells :)

    It is a delicious wee cake. I make them for friends , especially good for kids with egg allergy. Nice and moist and sticky. A bit like a jamaica ginger cake but a bit more dense.
    Enjoy! Seems a bit more healthy too as there is no marg in it.

    BTW, I cut up dried apricots in wee pieces last time and added them. Really gorgeous, and just took maybe 1 more minute. Cut them with scissors, easy as pie.

  • What about using some to decorate buns? Spread tops of buns with raspberry jam & sprinkle with coconut.

    you can replace an ounce of flour in plain vanilla biscuit recipes with the coconut, they end up tasting rather like 'NICE' biscuits.
    I sometimes make mini snowballs for the kids - all you do is get a pack of large marshmallows, melt some chocolate and dip the marshmallow in and roll it in the coconut! put on baking paper to set............ simple and kids of all ages love them!

    Just made one, took 2 mins to measure and mix, and done in 45 mins. Topped it with jam and a sprinkling of coconut - voila! Absolutely delicious, thanks so much for posting it! Would line the tin next time though.

    Still have lots of coconut left though :rotfl:, thanks everyone for the suggestions and keep them coming. :o at not being able to spell it right!

    We all make spelling mistakes! :D

    Don't panic about using u the coconut, it's not going to go off overnight :) I would keep it airtight and it shouldn't go off quickly at all. Good store cupboard staple :)
