You could make Coconut Pyramids
8oz dessicated coconut
6 oz sugar
1 egg
Beat egg, add coconut and sugar, mix to stiff past. Get a bowl of water and an egg cup. Dip the egg cup in the water. Put the mixture in the eggcup, pat down and turn over of a baking tray, repeat until all the mixture is used. Decorate each on with half glaze cherry. Bake in cool oven 180 C for 15-20 mins.
This is an old receipe we had lots as a child and my family love it still when I make them.0 -

A savoury option here.. measurements are very approximate as I always just do it by guesswork I'm afraid!
Pol Sambol (Sri Lankan coconut sambol)
- Put a small pkt of desiccated coconut in bowl with a splash of milk. Mix together well and then leave for ten minutes or so until coconut softens
-very finely chop a small onion and add to the bowl
-When coconut seems a bit more moist, add 1-2 teaspoons chilli powder (depending on how hot your powder is), a couple of dashes of lemon juice and a generous amount of salt
- Mix together with your hands, squeezing the coconut and flavourings together so they combine really well
Serve as a side dish with curry/rice- goes particularly well sprinkled onto some dal0 -
My husband remembers coconut pyramids made with coconut and condense milk.
His mission has been to try to find a coconut pyramid maker. His mother had one apparently and you filled this with mixture then pushed out with a plunger.
If anyone knows this receipe please pass on and if anyone knows where to buy the maker also pass on please.

I'm trying to use up old store cupboard ingredients and have come across two bags of dessicated coconut. Both are out of date, but that doesn't bother me.
Any suggestions? I have 3 preteen/teen boys who will eat almost anything!0 -

Cherry & coconut cake.
Just do your normal cake mix (marg, sugar, egg, flour) and bung in glace cherries, chopped, and coconut. Mr LW loves this in his lunchbox for work.If your dog thinks you're the best, don't seek a second opinion.;)0 -

My favourite cake when I was little were my Nan's coconut tarts; pastry cases filled with a mixture of coconut, ground almonds and raspberry jam.
