lots of desiccated coconut what to do?

I'm trying to use up old store cupboard ingredients and have come across two bags of dessicated coconut. Both are out of date, but that doesn't bother me.
Any suggestions? I have 3 preteen/teen boys who will eat almost anything!
Fifteens?
15 digestive biscuits (crushed)
15 glace cherries (chopped)
15 marshmallows (chopped)
half a tin of condensed milk (approx 200-250g)
dessicated coconut
Mix the biscuits, cherries and marshmallow in a bowl with the condensed milk until it's a thick mix that you can shape with your hands.
Roll it into a long sausage shape on greaseproof paper sprinkled with the coconut. Wrap in the paper and chill in the fridge for a couple of hours and then slice into roughly fifteen slices.
I've added your thread to our existing one on using dessicated coconut that should give you more ideas.

Thanks for merging the threads. I had searched but now discover I was spelling desiccated wrong (dessicated) - no wonder I didn't find anything!0
