Cut up any pumkin or squash flesh into chunks about an inch square, put on a baking tray and drizzle with a little olive oil, some MAPLE syrup - golden syrup will burn and not as nice! and a sprinkling of thyme, cook until soft and golden - lovely!0

about an hour i think, depends on the oven temp. Anyone know if you can make picke or jam or chutney with them?
Having said previously that pumpkins keep for up to a year, i am getting itchy fingers and looking at the big pumpkin i have at home, which has sat there for over a month, i want to do something with it! The other one made curry (yum) pumpkin pie, soup AND a large tub of puree which i had forgotten about and found in the freezer yesterday!Member no.1 of the 'I'm not in a clique' group :rotfl:

You can make chutney with it. Never tried! Do recipe search on Ask and there are several recipes.Mink0

Pumpkins are out now and I thought I'd make Pumpkin soup. We always get a pumpkin to carve for halloween but usually that's all we do with it.
This year I want to make something with the flesh so does anyone have a pumpkin soup recipe or any other recipes that I can use up the pumpkin on. :think:
I would also like to know if you can freeze the uncooked pieces of pumpkin if I chop them up, to make something with another day, does it freeze well at all.

Yes I have, and I'll post it in the recipes index if I can work out how to do it.
I wouldn't think pumpkin would freeze that well uncooked as it is quite watery. But mashed pumpkin freezes well, it was the first solid food I gave my eldest!Signature removed for peace of mind0 -
My Mum's favourite trick is to have roasted pumpkin with our roast chicken. :drool:
She cuts it into 1 inch cubes, leaving the skin on. Puts it in a pyrex dish, dribble of olive oil over the top, some oregano and pops it in the oven for an hour. It comes out wonderfully caramelized and gooey.Good, clean fun....MFW #11 2015 £7657 / £88800 -
Ha, ha, ha, ha , ha. You buy 1 pumpkin!! I have 25 to cope with, although I have already prepared and bottled 3 and eaten 2 others and there are 2 more squatting in my kitchen staring at me in an evil manner.
Sorry, got a bit of pumkin fever at the moment. I planted out a far too many seeds and they have taken over my vegi patch.
Anyway, back to the scheduled program;
Pumpkin soup :
Pumpkin (obviously)
Red onion
garlic
black pepper
stock cube
I cook the onion and garlic in olive oil. I steam or boil the pumpkin and then add to the onion and garlic, add some black pepper and a stock cube. Give it all a whirl in a blender and voila
Pumkin pie:
Get some pasty and stuff with pumpkin, season and cook. This is nice with some gravy on the top. I make a few and freeze them. Then when we cannot be bothered to cook just take some out of the freezer and bung them in the oven. The pasty is not that healthy, but better than going to the chippy. Can also add potatoes etc.

I tend to prepare and bottle our pumpkins, but I have frozen cooked pumpkin.
