    I love lemon curd... buy only HM lmon curd... however I bought some because I needed the jar for something else. It's not nice enough to eat on its own so do you have any recipes that I could make use of it?

    Lemon curd muffins - basic muffi mix, then half fill, put a blob if curd in, then fill with the reast of the mix.

    Lemon curd makes a rather nice filling in a sandwich sponge cake, especially if you drizzle the cake with lemon icing and make the sponge with lemon flavouring/lemon juice. I suppose you would have to really like lemon to go so OTT on lemon though!

    lemon curd tarts (as I made today) also a topping/filling for a sponge cake swirled with sweetened philadelphia (plain one of course not the herby garlic ones lol)

    I also spread on any old slice of cake, fruit cake, sponge whatever to add extra [STRIKE]calories[/STRIKE] interest ;)
