I made 'lemon delight'
the other day....
It was chuncks of a lemon drizzle sponge that had disintegrated because i tried to get it out fo the tin too soon, mixed with some extra thick double cream, lemon curd and marscapone cheese.Very delicious but soooo calorific!
I couldn't let that cake go to waste though......Not Buying It 20150 -
Bought 2 jars of lemon curd, have done jamtarts, OH has had some on toast , any other ideas? Not sure if I am confident enought to do lemon meringue tart but if anyone has an easy peasy recipe , would appreciate. All ideas welcome. :beer:0

I use it to flavour cakes - add a couple of big spoonfuls to a basic sponge mix for lemon cake/muffins0

Not keen on it myself but like it as the filling for a lemon drizzle cake or a sponge with lemon butter cream on the top. Lemon meringue pie has a custardy layer that really needs lemon juice rather than lemon curd but you could make a trifley version - layers of sponge and lemon curd topped with meringue. Not my kind of pudding but would be devoured by OH and kids.0

mmmmm - jam tarts I really fancy some of those
there was a recipe in good food mag a few months ago where they made a normal victoria sponge, but added lemon zest to the mixture, then sanwiched the cakes with a layer of lemon curd and a layer of whipped cream. then they drizzled lemon juice mixed with icing sugar on top. looked yummy.r.mac, you are so wise and wonderful, that post was lovely and so insightful!0 -
get some vol a vons (probably spelt wrong) or puff pastry and make traffic lights like you could buy from bakers when you were a child (or is that me just showing my age?)0

I absolutely love lemon curd and can eat it on its own. When you want a quick, cheesecakey-type something, just spread a digestive biscuit with Philadelphia or similar and a swipe of lemon curd to top it off. Delicious!!0

You can gently fold some into some softly whipped cream for a quick lemon syllabub type pudding, it's delicious served with amaretto biscuits (nice if you crush these on top too).0
