    right lemon sauce

make your chicken and batter as previuosly mentioned ...keep the chicken in a breast however

    ingredient
    1/4 pint water
approx 2 tablespoons sugar (again be careful about sweetness)
    1 large frech lemon/zest
    2 teaspoons cornpaste
    some thinly sliced carrots

    method

1 boil water add lemon juice (the juice of the lemon can be squeezed into the pan over a strainer)lemon zest and sugar in a suitable pan
2 Bring back to the boil again and reduce heat to a minimum
3 simmer for 1to2 mins then lightly thicken with cornpaste
finally add carrots to the sauce

the sauce is then poured on top of the chicken easy peasy

fried rice now this one is so easy it's unreal

    lets start with boiled rice

    3 cups of rice
    method
1 wash rice several times till water runs clear
2 add water to cover rice by half to three quarters inch measure this by putting middle finger in top of rice water should not go above first knuckle
3 bring to the boil till water absorbs the rice do not stir
4 cover and simmer on a low heat for about 10 mins
    5 turn off heat
rice will steam cook for another 5 mins till light and fluffy .losen rice with fork when ready

    now to fry the rice

    ingredient
    boiled rice
    oil
    egg
    spring onions chopped (optional)
    salt and pepper
    dark soy sauce
    light soy sauce

    method

in a wok (or frying pan whatever is easiest)
heat till smoking (frying pan really hot)
pour some sunflower oil approx 3 tablespoons
crack and egg into wok/frying pan
    mix around till fried
    add rice
add chopped spring onions (optional) mix around
add salt and pepper to taste mix around
pour 2 tea spoons approx light soy sauce in mix around
pour 3 tea spoons approx dark soy sauce in mix around

this should be the fried rice made tastes lovely ...like all others mix and match to suit your own preferred taste

    anymore let me know
