Nettle recipes- Food from the wild.

Remember to wear gloves when picking but Nettles don't sting when cooked!
Nettles are very nutrient rich and of course - [glow=red,2,300]free[/glow]! Don't gather them beside roads where they will have been contaminated by traffic fumes. If you have them in your garden and keep cutting them you get a regular supply of fresh leaves,

Ingredients:

2 tbs of oil

1 onion, chopped

3 tbs of flour

2 cloves garlic, chopped

3 handfuls of freshly picked and washed young nettles

2 cups soya milk

2 cups water or stock

salt and pepper to taste

Fry the onion and garlic in the oil for a few minutes then stir in the nettles until soft. Stir in the flour and gradually add the soya milk and water or stock, stirring all the time. Add seasoning and liquidise.

    be careful with this tho, both my mum and i havd/had allergy to nettles, made our mouths swell up.

    my recipe was not from that site
    it was sent me by a friend as a laugh when I complained about number of nettles in my garden, I don't know where she got it from but it is different to the one on the link you posted, similair but different,
    just as shepherd pie recipes are similair but different,

    are people determined to be unfriendly on here,

    as I say similair but not identical and not where I got it from, can't speak for my friend yet,

    starting to enjoy myself here but think I may give up


    Nettle Soup

    Don't worry - they don't sting when cooked! Nettles are very nutrient rich and of course - free! Don't gather them beside a busy road where they will have been contaminated by traffic fumes. If you keep cutting them from springtime you get a regular supply of fresh leaves, though they can get a bit insect infested during the summer!

    Ingredients:

    2 tablespoons of vegetable margarine or oil

    2 tablespoons of white flour

    1 onion, roughly chopped

    2 cloves garlic, chopped

    Freshly picked and washed young nettles (several good handfuls - picked with gloves and caution!)

    2 cups soya milk (tesco value is cheap and organic too)

    1 cup water or stock

    salt and pepper to taste

    Fry the onion and garlic in the oil or marg. for a few minutes then stir in the nettles (no need to chop or remove stalks) until they soften. Stir in the flour and gradually add the soya milk and water or stock, stirring all the time. Add seasonings and liquidise. Delicious...

    actually I agree

    franky's recipe wasn't word for word so why are you so sure where she got it from 160 ???

    and if other people are copying recipes word for word (which is against rules franky) and not giving credit, how is it only this one has been singled out,

    I don't think 160 was being sarcastic , a genuine mistake is what it looks like to me and an offer of help to produce links :)

    can i just say that it was an offer of friendly help, that i came across it by looking for something else, and all i wanted to do was help. no offence was intended, but i thought by posting it on the board, anyone else who might like some help would also feel free to ask.

    and to explain why I got so upset

    earlier in the day cathy had pm'd me accusing me of copying this recipe from the same site as the link you gave, and she has also told me that she and her 'cronies' had been discussing me and I 'wouldn't like what they had been talking about'

    so you can understand that when you posted a link to the same site it seemed more than coincidence,
