    if you like spicy food give chilli chicken a go..

    1 yellow pepper/1 red pepper
    1 red onion
    1 chilli /chilli seeds
    garlic
    100ml passata
    113ml chicken stock
    2 tbsp chilli powder

    cut the onion, chicken and garlic and cook together with chilli. cook for 5/6 mins then add the chilli powder. coat everything and cook for further 2 mins. add the passata and stock and bring to boil. add pepper, season with salt and pepper and simmer for 15 mins..

    we have this quite a bit and its lovely, and i think totally free, id definately recommend it

    Sounds yummy, will add that to my list for when the OH visits as he loves spicy food .. will be free as long as the chicken stock is Bovril :)
  • Mustard Chicken

    Serves: 2
    Syns per serving:
    1 Syn on Original and Extra Easy, and 3½ Syns on Green*
    *add 6 Syns per serving if not using chicken as a Healthy Extra ‘b’ choice
    Preparation time: 10 minutes
    Cooking time: 30 minutes

    ingredients

    2 tsp of wholegrain mustard
    2 chicken breasts
    2 x 28g/1oz slices of Parma ham
    Dash of lemon juice
    Fry Light
    To serve:
    Vegetables such as carrots, swede or butternut squash, or any other Free vegetables you fancy!

    method

    1. Preheat the oven to 220°C/Gas 7. Spread 1 teaspoon of mustard over the top of each chicken breast and then wrap a Parma ham slice around the chicken.
    2. Spray some baking foil with Fry Light and place the wrapped chicken breasts on the foil, drizzle with the lemon juice and wrap up the foil to cover the chicken.
    3. Peel and cut the vegetables into chunky chip shapes, place on a plate and microwave for 5 minutes on high to soften. Then spray with Fry Light and place on baking tray.
    4. Put the chicken on the middle shelf in the oven and the vegetables on the top shelf and leave to cook for 20 minutes. Open up the foil containing the chicken and cook for a further 10 minutes until lightly golden.
    5. Serve the chicken with the chunky vegetable chips.
    Tip: If not using a microwave to soften the vegetables, just place them in the oven for 15 minutes before adding the chicken.

    If having it on Original why not use your HEB choice as jacket chips to go with it.

  • Classic chicken curry

    Serves 4
    Syns per serving:
    Free on Original, Extra Easy and Green*
    *Add 6 Syns if not enjoying chicken as a Healthy Extra
    Cooking time: 30 minutes
    Preparation & cooking time: 1 hour 30 minutes plus marinating

    ingredients

    4 x 113g/4oz chicken breasts, skinned and boned
    284ml/½ pint very low fat natural yogurt
    2 tsp turmeric
    3 garlic cloves, crushed
    2 large onions, sliced
    426ml/¾ pint chicken stock made with Bovril
    3 cardamom pods
    1 x 2½cm/1in piece cinnamon stick
    4 black peppercorns
    4 cloves
    1 tsp crushed coriander seeds
    1 tbsp finely chopped root ginger
    1 tsp ground cumin
    ½ tsp chilli powder
    salt and ground black pepper
    2 tbsp chopped fresh coriander leaves

    method

    1. Slice the chicken and place in a bowl. Mix together the yogurt, turmeric and garlic and pour over the chicken. Cover and leave to marinate in the refrigerator or a cool place for at least 4 hours (or overnight).

    2. Put the onion and chicken stock in a large, heavy saucepan. Cover the pan, bring to the boil and then boil for 10 minutes. Reduce the heat, uncover the pan and cook gently for 20 minutes, until the onion is tender, golden and syrupy.

    3. Add all the spices to the pan, and cook for 3-4 minutes. Then add the chicken and the yogurt marinade. Cover the pan and simmer very gently over low heat for 45 minutes, until the chicken is cooked.

    4. Season to taste with salt and pepper, and serve immediately with boiled rice (Free on Green or 2 Syns per 28g/1oz on Original), and sprinkled with fresh coriander.

    Once again have this with Chips instead of rice as a change or lovely roasted veg.
