I could do with a tip on how to eek out some scrambled eggs - I seem to go through at least 12 making scrambley for only 4 people. Do others have this too?
Personally - scrambled eggs for just me is 2 eggs and a little splosh of milk. If I was being a bit more "luxurious" - then I would add a tiny bit of butter.
One thing I tend to do instead however - which makes eggs go a bit further - is a recipe I was taught when living abroad for a while. Its a sort of eggah. For 2 portions - I mix up 2-3 eggs (depending on size) with a reasonable "splosh" of milk and a heaped dessertspoon of flour. Add salt/pepper.
Stage 2 is that I fry up a sliced onion in a frypan in a bit of oil and add whatever other bits and pieces of savoury stuff I might have to use up - eg a few sliced-up tomatoes, a bit of chopped-up pepper, a few mushrooms, etc and saute till reasonably brown. (When I was taught this abroad - I wasnt vegetarian and I was taught to add in some sliced-up chipolata-type sausages at that point - I've substituted vegetarian ingredients since). I put my egg mixture into the frypan - on top of the savoury ingredients and saute till the bottom of this is firm and brown and then shove my frypan under the grill (with perhaps a bit of grated cheese on top) to "firm up" the top.
Thats good for a light lunch or supper type dish with a bit of salad and some nice crusty bread.0 -
Hmmm...I was also wondering about whether 3 eggs could do for 2 portions by adding a few breadcrumbs in.
I think I would probably heat a bit of butter and oil and saute up some pureed garlic and sliced onion in it. Then saute a small handful of breadcrumbs. Mix my 3 eggs with a splosh of milk and bit of seasoning (including something a bit spicier - like paprika or similar). I would finish by serving it with tomatoes (raw or sauteed) and a bit of pickled cucumber. Eaten with things like crusty bread/black olives/feta cheese (or grating of cheese over the top). Nom nom
But then - some of my cooking lessons have been from a variety of "cultural sources" - so appreciate they might not meet the tastes of everyone else...I'll try a lot of nations' cuisines and see what ideas I can pick up...0 -

Tonight I went to collect the kids, and she already had my bag of bits of food ready for me by the door - how bad is that:o:o Ho-hum, 3 jars of just out of date sauce for me, 5 bits of lovely (teensy bit brown) fruit, bag of sugar (she bought it bogof), some just gone soft biscuits, and some jam that she didn't like - that's about 5 meals to me

skaps I read somewhere that if you leave the phone charger plugged in to the socket, even if you're not charging the phone, it can seep away about £10 a year in elec. If like at my DD's house there are 4 or5 mobiles that's a lot of pennies0 -
Be careful what you throw away. Remember that you can use
- The stalks of brocolli, peeled and chopped finely
- The greens of cauliflower, cooked like cabbage
- The leaves of celery, especially in a salad
- Bread crusts make breadcrumbs. Toast and whizz in a food processor. Use as stuffing, etc.0 -
Use odd lonely socks to clean the sink. Pop on your hand and you can get in all the nooks and crannies without getting your nails filthyA little nonsense now and then is relished by the wisest men :cool:

That's funny zippychick - every time I do a machine wash, I always end up with an odd sock, so that's an awful lot of sinks I could clean !!0
