Hi Shaz! How about a pastryless quiche with the sweetcorn, spinach and eggs? You have the ingredients for a dish I regularly make - bean stew.
Soak some beans overnight in plenty of water. Next day boil hard for ten mins then cook for as long as shown on the packet. I always cook the whole pack in one and freeze the extra portion.
Fry onion and celery, add carrot and garlic if you have it. Add a tin of tomatoes if you have some and some herbs (mixed or whatever you fancy) add some water or stock to cover veg. Add some rinsed red lentils as these don't need soaking. Then add your beans and cook for half hour or so. I add pasta and cook for as long as needed (I often break up spag into short pieces.) Near the end of the cooking add some spinach. You can add all sorts of things to this - think minestrone. Put some tom puree in if you have it.WL 11 st 5lb as at 050109. 160209 11st 2lb

Another dish I make is a curry using green or brown lentils and spinach. Check if your lentils need soaking if so follow pack instructions. Then boil as per instructions on pack. Fry the onion and celery and mushrooms. Add whatever spices you usually use for curry (I cheat and use the 4p sauce from Asda) then add the lentils and some water/stock, simmer for 10 mins or so and add the spinach. You could serve with hard boiled eggs and rice.WL 11 st 5lb as at 050109. 160209 11st 2lb

oo shaz just got this & will be back in a bit having hunted recipe book fr some ideas! You could do a lovely batch of soup though like this!
Chop & stir onion in with tablespoo of oil until sweated (hate that expression when discussing food lol!) and while thats doing top & tail carrot x 2 and 2 sticks celery (I dont bother to skin em as goodness in the skin!) & chop. Boil kettle & then when onion done (chuck in garlic too if you like it!) make up a pint & half of stock and put in big pan with onion, carrot, cenery & a cup of either beans or pulses & simmer for 40 mins. If you want soe extra goodness whac in some spinach (or nettles!) & whiz - voila soup for a week. If you like it creamy then add some yog at last min. Add spices & herbs as you like - curry or mixed hersb or corriander would all be yummy but I tend to have a sniff & see what "goes" & chuck that in. Mid you use a teaspoon or you may have a "ooo s*** it all fell i disaster" will have a look for other recipes in a bit - off to rescue tea!Nerd no 109 Long haulers supporters DFW #1! I shall certainly post my experiences. I'm going to try chutney, crumble and fruit fool.
