Unfortunately mum's memory is not that good....but then it must be about 16yrs ago she last made junket or the apple snow, so I'll forgive her:p

I found http://thefoody.com/pudding/junket.html which looks very much like the recipe she used, with the exception of the alcohol. I've posted it to the site, in case there's anything else there that might appeal.

I'm 90% certain that she use to stew & mash the apple, fold it ito the stiff egg whites then bake it, rather than leave it raw as some folk have suggested---guess a bit like lemon meringue but minus pastry & with apple:confused:

tomato dahl and rice, full nutritional breakdown

    recipe

    500g dry weight red lentils
300g chopped onion approx 3 medium onions
    2x 400g tins tomatoes
    75g veg oil
2 heaped tspns garlic, garam masala, salt and pepper to taste

Fry onion in oil and add spices. When turning golden, stir in lentils and tomatoes, chopped up and their juice, so oil coats the grains, then add a pint at a time of liquid, waiting til it looks absorbed. (orangy brown and gloopy)

Add enough water to make a consistency like thick soup, and all the lentils fully disolved. A taste teste will show you, if it's still 'powdery' add more liquid and keep boiling!:D

serve with 125g dry weight rice each

Taste and adjust seasoning as desired. 15 pence per serving, 802 calories for entire meal.

a very generous sized dinner with the following percentage of your daily needs:

oh n not the geek ref again! They'll never let me live it down in work (as indicated again today by two geek refs!!)...I mean, I think its a compliment but theyre still not having it! Re the tom & dahl recipe do you think it would be nice with nettles? Just a thought, esp if it adds the texture of spinach? A come dine ith me recipe was a veggie curry which was delicious by the look of it...will see if I can find the recipe...dead easy & I suspect cheap! If find it can you work out the pricings you lovely geek you?!! (I can say that to weezle cos she knows I dont mean it as a non-compliment - unlike work collegues!)
